Coupez le beurre froid en petits morceaux et incorporez-le du bout des doigts dans la farine jusqu&rsquo;\u00e0 ce que le m\u00e9lange ait la consistance de chapelure.<\/p><\/li><li><p>Battez l&rsquo;\u0153uf, ajoutez-le au m\u00e9lange de farine et p\u00e9trissez jusqu&rsquo;\u00e0 ce que la p\u00e2te forme une boule. Si la p\u00e2te est trop s\u00e8che, ajoutez une ou deux cuill\u00e8res \u00e0 caf\u00e9 d&rsquo;eau.<\/p><\/li><li><p>Emballer la p\u00e2te dans du film plastique et laisser reposer au r\u00e9frig\u00e9rateur pendant au moins 1 heure.<\/p><\/li><li><p>Pr\u00e9chauffez ensuite le four \u00e0 180\u00b0 C.<\/p><\/li><li><p>\u00c9talez la p\u00e2te sur un plan de travail bien farin\u00e9 jusqu&rsquo;\u00e0 obtenir une \u00e9paisseur d&rsquo;environ 4 mm. Utilisez une tasse ou similaire pour d\u00e9couper des cercles, un peu plus larges que les moules \u00e0 muffins. D\u00e9coupez autant de cercles que possible, retirez la p\u00e2te entre les cercles, puis \u00e9ventuellement abaissez-la de nouveau et d\u00e9coupez davantage de cercles.<\/p><\/li><li><p>Pressez les cercles dans les moules, piquez le fond avec une fourchette et cuisez au four pendant 10-12 minutes \u00e0 180\u00b0 C, jusqu&rsquo;\u00e0 ce que la p\u00e2te soit dor\u00e9e. Laissez ensuite refroidir les tartes sur une grille.<\/p><\/li><\/ol><h4>Pour la garniture<\/h4><ol><li><p>M\u00e9langez le Ricotta bien \u00e9goutt\u00e9 avec le Pesto et le Parmesan r\u00e2p\u00e9.<\/p><\/li><li><p>Garnissez les tartes avec le m\u00e9lange de Ricotta \u00e0 l&rsquo;aide d&rsquo;une poche \u00e0 douille et d\u00e9corez avec des gouttes de balsamique.
