L&rsquo;origine de la recette de la Porchetta reste incertaine. Ce qui est s\u00fbr, c&rsquo;est qu&rsquo;il existe deux mani\u00e8res traditionnelles de la pr\u00e9parer. Dans le sud de la Toscane, dans les <a href=\"https:\/\/de.wikipedia.org\/wiki\/Castelli_Romani\" target=\"_blank\" rel=\"noreferrer noopener\">Castelli Romani<\/a> et dans quelques autres r\u00e9gions du centre de l&rsquo;Italie, cette sp\u00e9cialit\u00e9 est assaisonn\u00e9e de romarin. En Ombrie, dans les Marches et en Romagne, en revanche, le r\u00f4ti est parfum\u00e9 au fenouil sauvage. Outre le romarin et le fenouil, on trouve parfois aussi des gousses d&rsquo;ail enti\u00e8res, du foie hach\u00e9 ou des cerises aigres ainsi que des amandes dans la farce. Le tout est ensuite roul\u00e9 et solidement ficel\u00e9 avant d&rsquo;\u00eatre plac\u00e9 sur une broche. La tradition veut que la Porchetta soit cuite dans un four \u00e0 bois. On trouve cette sp\u00e9cialit\u00e9 partout dans le pays chez le boucher (Macelleria) et on peut ainsi ramener cette d\u00e9licatesse \u00e0 la maison.
