Traditionnellement, elles sont fa\u00e7onn\u00e9es en aplatissant de petits morceaux de p\u00e2te avec un couteau. Cela semble simple, mais c&rsquo;est un v\u00e9ritable art.  <\/p>\n\n\n\n<p>Classiquement, les Pouillais servent leurs orecchiette avec des cime di rapa. La coque de la burrata est \u00e9galement faite de mozzarella. Pour cela, le caill\u00e9 frais est arros\u00e9 d&rsquo;eau chaude et p\u00e9tri jusqu&rsquo;\u00e0 l&rsquo;obtention de la structure fibreuse typique de la mozzarella. Des portions de ce fromage p\u00e9tri frais sont ensuite pr\u00e9lev\u00e9es, form\u00e9es en petits sacs et remplies.<\/p>\n\n\n\n<p>Ce qui rend la burrata sp\u00e9ciale, c&rsquo;est son c\u0153ur. L&rsquo;int\u00e9rieur du petit sac de fromage est rempli de stracciatella, un m\u00e9lange unique de cr\u00e8me et de mozzarella effiloch\u00e9e. Quand vous coupez la burrata, la stracciatella cr\u00e9meuse et fra\u00eeche s&rsquo;\u00e9coule. La saucisse est faite \u00e0 partir de morceaux de cou de porc grossi\u00e8rement coup\u00e9s. Les morceaux de viande sont d&rsquo;abord sal\u00e9s \u00e0 la main puis remplis dans un boyau naturel. <\/p>\n\n\n\n<p>Dans les Pouilles, c&rsquo;est pourquoi on classe le capocollo dans les \u00ab\u00a0insaccati\u00a0\u00bb, c&rsquo;est-\u00e0-dire les saucisses \u00ab\u00a0ensach\u00e9es\u00a0\u00bb. La viande est press\u00e9e et assaisonn\u00e9e. Enfin, les paquets sont fermement entour\u00e9s de ficelle. Cela donne la forme cylindrique typique du capocollo. Ce sont des galettes frites, qui ressemblent aux empanadas. Comme la focaccia, les panzerotti sont aussi un streetfood des Pouilles. On les ach\u00e8te \u00e0 la boulangerie ou \u00e0 la pizzeria. Ils sont croustillants et farcis avec les ingr\u00e9dients typiques du pays. Il a de nombreux adeptes en Allemagne aussi. Mais cela n&rsquo;a pas toujours \u00e9t\u00e9 le cas. L&rsquo;histoire de ce c\u00e9page dans les Pouilles remonte \u00e0 plusieurs si\u00e8cles. On suppose que les raisins sont venus d&rsquo;abord de l&rsquo;actuelle Yougoslavie dans le pays. Au fil des si\u00e8cles, le Primitivo a alors \u00e9t\u00e9 le vin des paysans locaux. Au d\u00e9but de notre mill\u00e9naire, le Primitivo a \u00e9galement \u00e9t\u00e9 d\u00e9couvert par les Europ\u00e9ens du Nord et a depuis connu un succ\u00e8s unique.<\/p>\n\n\n\n<p>Le nom n&rsquo;a d&rsquo;ailleurs rien \u00e0 voir avec \u00ab\u00a0primitif\u00a0\u00bb, mais se r\u00e9f\u00e8re \u00e0 la maturation pr\u00e9coce du c\u00e9page : en italien \u00ab\u00a0primo\u00a0\u00bb signifie le premier, le mot vient du latin \u00ab\u00a0Primativus\u00a0\u00bb.
