Le Lievito Madre est un levain de bl\u00e9 qui contient de nombreuses levures et qui donne \u00e0 la p\u00e2te un fort \u00e9lan de croissance. <\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul itemprop=\"recipeIngredient\">\n<li>10 g de Lievito Madre <\/li>\n<li>30 g de sel<\/li>\n<li>600 ml d&rsquo;eau froide<\/li>\n<li>50 ml d&rsquo;huile d&rsquo;olive<\/li>\n<li>1 cuill\u00e8re \u00e0 soupe de sucre<\/li>\n<li>1 kg de farine (Tipo 00)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol itemprop=\"recipeInstructions\">\n<li>\n<p>M\u00e9langer 10 g de Lievito Madre avec 100 g de farine, le sucre et environ 50 ml d&rsquo;eau. Laisser fermenter pendant 2 heures.<\/p>\n<\/li>\n<li>\n<p>Dissoudre le sel dans 550 ml d&rsquo;eau froide.<\/p>\n<\/li>\n<li>\n<p>Verser 900 g de farine dans un grand bol. Incorporer le m\u00e9lange de Lievito Madre dans la farine. Puis, ajouter progressivement l&rsquo;eau sal\u00e9e dans la farine tout en p\u00e9trissant \u00e9nergiquement.<\/p>\n<\/li>\n<li>\n<p>Une fois le tout bien p\u00e9tri, incorporer l&rsquo;huile d&rsquo;olive.<\/p>\n<\/li>\n<li>\n<p>Lorsque la p\u00e2te est \u00e9lastique et ne colle plus (apr\u00e8s environ 10 minutes de p\u00e9trissage), couvrir et laisser reposer \u00e0 temp\u00e9rature ambiante pendant 3 heures.<\/p>\n<\/li>\n<li>\n<p>Par la suite, former 8 boules de p\u00e2te de taille \u00e9gale et les laisser reposer couvertes au r\u00e9frig\u00e9rateur pendant 21 heures.
