Il est assez simple \u00e0 pr\u00e9parer et apporte de la couleur dans l&rsquo;assiette en <strong>automne et en hiver<\/strong>. Le risotto au radicchio est id\u00e9al pour un repas entre amis ou en famille.  <\/p>\n<p>Le radicchio, avec ses magnifiques feuilles carmin et ses veines d&rsquo;un blanc neige, se distingue par ses d\u00e9licates notes am\u00e8res. Dans le risotto, l&rsquo;amertume du radicchio est adoucie par le beurre et le parmesan. La texture devient douce et particuli\u00e8rement agr\u00e9able. L&rsquo;<strong>ar\u00f4me fum\u00e9 du bacon<\/strong> s&rsquo;accorde \u00e0 merveille. <\/p>\n<h2>Risotto au radicchio avec chips de bacon<\/h2>\n<p><strong>Personnes :<\/strong> 4 <\/p>\n<p><strong>Temps de pr\u00e9paration :<\/strong> 50 min <\/p>\n<p><strong>Niveau de difficult\u00e9 :<\/strong> moyen<\/p>\n<h3> Ingr\u00e9dients<\/h3>\n<ul>\n<li>200 g de radicchio<\/li>\n<li>1x oignon de taille moyenne<\/li>\n<li>1x gousse d&rsquo;ail<\/li>\n<li>2 EL d&rsquo;huile d&rsquo;olive<\/li>\n<li>100 ml de vin rouge <\/li>\n<li>250 g de riz \u00e0 risotto, <a href=\"\/sortiment\/mehl-reis-und-hefe\/reis-und-risotto.html\">Carnaroli<\/a><\/li>\n<li>1 L de bouillon de poulet <\/li>\n<li>80 g de tranches de bacon <\/li>\n<li>2 EL de beurre<\/li>\n<li>30 g de Parmigiano Reggiano, 36 mois<\/li>\n<li>Sel et poivre<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/be.gustini.de\/blog\/wp-content\/uploads\/2020\/01\/01-Radicchio-Risotto.jpg\" alt=\"\" class=\"alignnone size-full wp-image-14221\" width=\"600\" height=\"900\"><\/p>\n<h3> Et c&rsquo;est aussi simple que \u00e7a<\/h3>\n<ol>\n<li>Lavez bien le radicchio et coupez-le en lani\u00e8res. Faites suer les oignons en d\u00e9s et l&rsquo;ail finement hach\u00e9 dans l&rsquo;huile d&rsquo;olive. Ajoutez ensuite le radicchio et d\u00e9glacez le tout avec du vin rouge. Laissez le vin rouge s&rsquo;\u00e9vaporer compl\u00e8tement.<\/li>\n<li>Ajoutez le riz \u00e0 risotto dans la casserole et faites sauter les grains bri\u00e8vement. Ajoutez progressivement le bouillon de poulet chaud, de sorte que le riz soit juste couvert. Laissez mijoter doucement et r\u00e9duisez le liquide en remuant constamment. Lorsque le liquide s\u2019est \u00e9vapor\u00e9, ajoutez de nouveau une louche de bouillon et r\u00e9p\u00e9tez ce processus pendant 20 minutes au total.<\/li>\n<li>Mettez les tranches de bacon dans une po\u00eale sans huile et chauffez \u00e0 temp\u00e9rature moyenne. Les tranches de bacon ont besoin de temps pour que la graisse s&rsquo;\u00e9coule et qu&rsquo;elles deviennent croustillantes. Faites r\u00f4tir le bacon 4 minutes de chaque c\u00f4t\u00e9.<\/li>\n<li>\u00c0 la fin, incorporez au risotto le beurre froid et le Parmigiano Reggiano. M\u00e9langez bien \u00e0 nouveau.
