D\u00e8s que le sucre est compl\u00e8tement dissous, incorporer le mascarpone et le Vin Santo.<\/li><li>Monter les blancs en neige avec une pinc\u00e9e de sel et les incorporer d\u00e9licatement au m\u00e9lange pr\u00e9c\u00e9dent.<\/li><li>Mettre la cr\u00e8me de mascarpone au r\u00e9frig\u00e9rateur pendant 30 minutes.<\/li><li>Tremper bri\u00e8vement chaque sp\u00e9culoos dans l&rsquo;espresso et les placer c\u00f4te \u00e0 c\u00f4te dans un plat \u00e0 gratin.<\/li><li>Couvrir les sp\u00e9culoos avec la cr\u00e8me de mascarpone.
