La couleur peut donc indiquer la fra\u00eecheur, ou l&rsquo;\u00e9tat de stockage de l&rsquo;huile. Cependant, il est important de noter que la composition des nutriments pr\u00e9sents dans le sol influence aussi la coloration de l&rsquo;huile d&rsquo;olive.
