Mais en r\u00e9alit\u00e9, le nom devrait \u00eatre : <strong>Soupe pour les Lombards<\/strong>. Car la cr\u00e9ation de ce plat est \u00e9troitement li\u00e9e \u00e0 la construction de la <strong>Ferrovia Faentina<\/strong>, la liaison ferroviaire entre Florence, Faenza et Borgo San Lorenzo (1880-1893).<\/p>\n<p>Lorsque les ouvriers, venant de Lombardie, avaient fini leur dur labeur, souvent apr\u00e8s de tr\u00e8s longues journ\u00e9es, et qu&rsquo;ils avaient faim, les <strong>Trattorien<\/strong> \u00e9taient pour la plupart d\u00e9j\u00e0 <strong>ferm\u00e9s<\/strong>. Il fallait donc penser \u00e0 un <strong>repas chaud<\/strong> qui pouvait \u00eatre pr\u00e9par\u00e9 \u00e0 toute heure et ne pas trop peser sur le portefeuille des pauvres mineurs.
