Le Zampone est compos\u00e9 de <strong>viande de porc<\/strong> de l&rsquo;\u00e9paule, de la t\u00eate, du cou et des joues de porc. Il comprend \u00e9galement la poitrine de la pelure et la viande de la jarret.<\/p>\n<p>Tout est ensuite assaisonn\u00e9 avec un m\u00e9lange sp\u00e9cial d&rsquo;\u00e9pices robuste comprenant du sel, du poivre, de la cannelle et des ingr\u00e9dients secrets, avant d&rsquo;\u00eatre pass\u00e9 au hachoir \u00e0 viande.
