Ce qui est tr\u00e8s important pour la r\u00e9ussite de ce plat est l&rsquo;utilisation d&rsquo;un bon riz \u00e0 risotto, comme le Carnaroli, le roi du riz.<\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-ingredients\" itemprop=\"recipeIngredient\">\n<ul>\n<li>1 courge Hokkaido (env. 450 g de chair)<\/li>\n<li>100 g de beurre<\/li>\n<li>1 \u00e9chalote (finement hach\u00e9e)<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de sel marin<\/li>\n<li>Poivre (fra\u00eechement moulu)<\/li>\n<li>350 g de riz \u00e0 risotto (par exemple Carnaroli)<\/li>\n<li>1,5 l de bouillon de poulet (ou de l\u00e9gumes)<\/li>\n<li>100 g de Grana Padano (r\u00e2p\u00e9)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\" itemprop=\"recipeInstructions\">\n<ol>\n<li>\n<p>Coupez la courge en deux et retirez les graines. Coupez la chair avec la peau en morceaux de 1 cm. Remplir une tasse avec les morceaux de courge et mettre de c\u00f4t\u00e9. Faire cuire les autres morceaux pendant environ 5 minutes jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient tendres. Ensuite, les passer au presse-pur\u00e9e\/mixer et r\u00e9server.<\/p>\n<\/li>\n<li>\n<p>Faites fondre 4 cuill\u00e8res \u00e0 soupe de beurre \u00e0 feu moyen dans une casserole \u00e0 fond \u00e9pais, et faites-y revenir l&rsquo;\u00e9chalote jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit translucide. Ajoutez ensuite les morceaux de courge crus, salez et poivrez. Laisser frire pendant 2 minutes, puis ajoutez le riz et remuez constamment pendant une minute \u2013 jusqu&rsquo;\u00e0 ce que le riz devienne translucide.<\/p>\n<\/li>\n<li>\n<p>Ajoutez lentement le bouillon, une louche apr\u00e8s l&rsquo;autre, en remuant bien. Ne rajoutez du bouillon que lorsque le liquide pr\u00e9c\u00e9dent est compl\u00e8tement absorb\u00e9. Avec un riz basmati, il est impensable d&rsquo;obtenir un risotto cr\u00e9meux. Pour obtenir la consistance onctueuse d\u00e9sir\u00e9e, nous recommandons des vari\u00e9t\u00e9s de riz italiennes riches en amidon telles que Carnaroli, Arborio ou Vialone Nano.<\/p>\n<h2>Hokkaido : Quelle courge pour le risotto ?<\/h2>\n<p>Le <a href=\"https:\/\/de.wikipedia.org\/wiki\/Hokkaidok%C3%BCrbis\">courge Hokkaido<\/a> est le premier choix car cette courge a un ar\u00f4me fruit\u00e9 et d&rsquo;excellentes propri\u00e9t\u00e9s culinaires. Ainsi, m\u00eame apr\u00e8s cuisson, les morceaux de Hokkaido gardent une bonne consistance.
