Cette r\u00e9gion se situe en Lombardie et borde tout au <strong>nord de l&rsquo;Italie<\/strong> la Suisse et la r\u00e9gion des Grisons. La vall\u00e9e, longue de 120 kilom\u00e8tres, se trouve <strong>entre le Piz Bernina et les Alpes bergamasques<\/strong>. En son centre, le <strong>petit fleuve Adda<\/strong> serpente jusqu&rsquo;au lac de C\u00f4me.<\/p>\n<p>Dans sa partie inf\u00e9rieure, le Veltlin est vaste et agr\u00e9ablement <strong>m\u00e9diterran\u00e9enne<\/strong>; dans sa partie sup\u00e9rieure, il est abrupt avec un climat <strong>alpin rigoureux<\/strong>. On y trouve de puissants glaciers et des panoramas grandioses. Construits en pierre naturelle, les <strong>villages de montagne<\/strong> s&rsquo;accrochent aux pentes abruptes, et sur les terrasses, d&rsquo;anciennes vignes tendent leurs feuilles vers le soleil. Le Valtellina est un <strong>paradis pour tout alpiniste<\/strong> : ici, vous pouvez escalader ou marcher sur des sentiers naturels.<\/p>\n<h2><strong>Le bl\u00e9 des pa\u00efens<\/strong><\/h2>\n<p>La cuisine veltlinienne est assez rustique et marqu\u00e9e par la vie aust\u00e8re des <strong>paysans montagnards<\/strong> pauvres. L&rsquo;un des principaux ingr\u00e9dients est le sarrasin. Le sarrasin est appel\u00e9 en italien grano saracen: le bl\u00e9 des pa\u00efens. Le sarrasin vient de Sib\u00e9rie et a \u00e9t\u00e9 introduit dans le Veltlin au Moyen \u00c2ge, o\u00f9 il est devenu une denr\u00e9e de base.<\/p>\n<h2><strong>La cuisine veltlinienne a du caract\u00e8re<\/strong><\/h2>\n<figure id=\"attachment_7857\" aria-describedby=\"caption-attachment-7857\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"\/blog\/wp-content\/uploads\/2014\/10\/Lombardei-02.jpg\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-7857 size-medium\" src=\"\/blog\/wp-content\/uploads\/2014\/10\/Lombardei-02-300x300.jpg\" alt=\"Bresaola\" width=\"300\" height=\"300\"><\/a><figcaption id=\"caption-attachment-7857\" class=\"wp-caption-text\">Bresaola, un robuste jambon de boeuf.<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">Un menu typique \u00ab\u00a0alla Valtellina\u00a0\u00bb commence par le <strong>Sciatt<\/strong>, une galette de sarrasin frite et fourr\u00e9e au fromage. Les Veltliniens servent avec celle-ci du <strong><a title=\"Bresaola dans la boutique Gustini!\" href=\"\/sortiment\/italienische-wurst.html\" target=\"_blank\" rel=\"noopener noreferrer\">Bresaola<\/a><\/strong>, un jambon de boeuf s\u00e9ch\u00e9 \u00e0 l&rsquo;air, qui rappelle beaucoup la viande des Grisons.<\/p>\n<p style=\"text-align: justify;\">Comme plat de p\u00e2tes, on trouve le plat le plus c\u00e9l\u00e8bre de la r\u00e9gion, les <strong><a title=\"Voici la recette!\" href=\"\/pizzoccheri-nach-art-des-valtellina-r223.html\" target=\"_blank\" rel=\"noopener noreferrer\">Pizzoccheri<\/a><\/strong>. Les Pizzoccheri sont des p\u00e2tes dont la p\u00e2te est faite avec de la farine de sarrasin. Elles ont un go\u00fbt d\u00e9licieux, l\u00e9g\u00e8rement amer et noisett\u00e9, et sont souvent servies dans un gratin \u00e9pic\u00e9 avec du chou. Mais les paysans de montagne ont \u00e9galement d\u00e9clin\u00e9 le classique italien de la polenta en une version au sarrasin. Vous devez absolument go\u00fbter la <strong>Polenta Taragna<\/strong>!<\/p>\n<figure id=\"attachment_7856\" aria-describedby=\"caption-attachment-7856\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"\/blog\/wp-content\/uploads\/2014\/10\/Lombardei-01.jpg\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-7856 size-medium\" src=\"\/blog\/wp-content\/uploads\/2014\/10\/Lombardei-01-300x300.jpg\" alt=\"Pizzoccheri avec chou\" width=\"300\" height=\"300\"><\/a><figcaption id=\"caption-attachment-7856\" class=\"wp-caption-text\">Pizzoccheri avec chou, pommes de terre et beaucoup de fromage.<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">Dans les desserts veltliniens, le sarrasin est bien s\u00fbr incontournable. La <strong>Bisciola<\/strong>, une sorte de <strong><a title=\"Vous devriez absolument go\u00fbter le Panettone!\" href=\"\/sortiment\/suesses-und-gebaeck\/panettone-und-pandoro.html\" target=\"_blank\" rel=\"noopener noreferrer\">Panettone<\/a><\/strong>, est cuisin\u00e9e avec des fruits secs et du sucre, mais aussi avec du sarrasin!<\/p>\n<p style=\"text-align: justify;\">Pour accompagner ces mets, les Veltliniens boivent traditionnellement du vin rouge et non du Veltliner vert ! Le c\u00e9l\u00e8bre vin blanc est authentiquement autrichien. Le Veltlin ne lui a pr\u00eat\u00e9 que son nom, il n&rsquo;est pas cultiv\u00e9 ici. Le c\u00e9page de la r\u00e9gion est le raisin <strong>Nebbiolo<\/strong>. \u00c0 partir de celui-ci, on produit le <strong>Valtellina Superiore<\/strong>, un vin rouge de qualit\u00e9 quotidienne aux ar\u00f4mes de fruits rouges.
