Plus pr\u00e9cis\u00e9ment, c&rsquo;\u00e9tait un <strong>vin de marc<\/strong>, que Pline appelait \u00e9galement <strong>vin des travailleurs<\/strong> (<em>vinum operarium<\/em>). Les marcs sont les r\u00e9sidus de raisins restants apr\u00e8s le pressage, \u00e0 partir desquels on fabriquait \u00e9galement le grappa dans le pass\u00e9. Ces r\u00e9sidus \u00e9taient m\u00e9lang\u00e9s \u00e0 de l&rsquo;eau et, apr\u00e8s un jour de stockage, pass\u00e9s une nouvelle fois dans le pressoir \u00e0 vin. Cette <strong>boisson alcoolis\u00e9e<\/strong> \u00e9tait abordable pour les couches les plus pauvres de la population et avait un go\u00fbt similaire \u00e0 celui de <strong>vin tr\u00e8s dilu\u00e9 avec de l&rsquo;eau gazeuse<\/strong>. En raison du mode de fabrication, la Lora <strong>pouvait rapidement se transformer en vinaigre<\/strong>, ce qui \u00e9tait cependant accept\u00e9 car on pouvait alors en faire du Posca. Si les commandants romains permettaient \u00e0 leurs <strong>soldats<\/strong> de consommer de la Lora, elle \u00e9tait produite sur place \u00e0 partir des marcs apport\u00e9s, car la boisson n&rsquo;\u00e9tait pas transportable. <\/p>\n<h2>Qu&rsquo;est-ce que le Posca ?<\/h2>\n<p>Le Posca \u00e9tait une boisson rafra\u00eechissante populaire dans l&rsquo;Antiquit\u00e9 grecque et romaine. Elle \u00e9tait probablement le plus souvent conserv\u00e9e dans des r\u00e9cipients en argile (amphores). La <strong>recette exacte<\/strong> n&rsquo;a pas \u00e9t\u00e9 transmise, mais on pense aujourd&rsquo;hui qu&rsquo;elle \u00e9tait compos\u00e9e de 1 \u00bd tasse de vinaigre de vin, \u00bd tasse de miel, 1 cuill\u00e8re \u00e0 caf\u00e9 de coriandre moulue, 4 tasses d&rsquo;eau. Le m\u00e9lange \u00e9tait chauff\u00e9 dans une casserole pour dissoudre le miel, le coriandre \u00e9tait filtr\u00e9 et la boisson \u00e9tait refroidie avant d&rsquo;\u00eatre servie.<br \/>\nDans l&rsquo;Antiquit\u00e9 grecque, c&rsquo;\u00e9tait encore une <strong>boisson m\u00e9dicinale<\/strong>, mais \u00e0 Rome, elle est devenue une <strong>boisson quotidienne<\/strong> pour les classes pauvres et inf\u00e9rieures. M\u00eame si c&rsquo;\u00e9tait une <strong>boisson des pauvres<\/strong>, elle avait plusieurs <strong>avantages pour la sant\u00e9<\/strong> : elle fournissait des liquides et des calories et aidait, gr\u00e2ce \u00e0 sa teneur en vitamine C, \u00e0 pr\u00e9venir le scorbut. Il faut se rappeler qu&rsquo;il n&rsquo;y avait pas d&rsquo;eau potable aussi facilement disponible qu&rsquo;aujourd&rsquo;hui et que l&rsquo;acidit\u00e9 tuait les bact\u00e9ries dans l&rsquo;eau et masquait le mauvais go\u00fbt de cette derni\u00e8re.<\/p>\n<h2>Recette avec du Posca<\/h2>\n<p>Le Posca n&rsquo;\u00e9tait pas seulement utilis\u00e9 comme boisson rafra\u00eechissante, mais aussi comme ingr\u00e9dient dans la cuisine. Un <strong>recette de pain aigre (<em>Sala cattabia<\/em>)<\/strong> rapport\u00e9e par Apicius utilisait du Posca. Prenez du pain de bl\u00e9 entier rassi, \u00e9videz-le et trempez la mie dans du <em>posca<\/em>. Ensuite, \u00e9crasez dans un mortier du poivre, <a title=\"Commander du miel italien\" href=\"\/sortiment\/brot-aufstriche-knabbern.html\">du miel<\/a>, de la menthe, de l&rsquo;ail, du coriandre frais, <a title=\"Acheter du sel italien\" href=\"\/sortiment\/saucen-pesto-und-tomaten\/kraeuter-gewuerze-salz.html\">du sel<\/a>, de l&rsquo;eau, <a title=\"Commander de l'huile d'olive italienne\" href=\"sortiment\/olivenoel-aus-italien.html\">de l&rsquo;huile d&rsquo;olive<\/a> et du fromage de vache sal\u00e9 (donc <a title=\"Commander du Parmesan\" href=\"\/parmigiano-reggiano-stravecchio-d-o-p-36-mesi.html\">du Parmesan<\/a> ou <a title=\"Commander du Grana Padano\" href=\"\/grana-padano-dop-10-mesi.html\">du Grana Padano<\/a>), ajoutez le pain imbib\u00e9, arrosez-le de <a title=\"Commander du vin rouge italien\" href=\"\/sortiment\/wein-prosecco-italien.html\">vin rouge<\/a> et servez le breuvage.<\/p>\n<p><!-- END --><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Lora, un vin de marc romain \u00e9conomique, devenait rapidement du vinaigre mais \u00e9tait appr\u00e9ci\u00e9 par les classes pauvres et les soldats pour sa praticit\u00e9.
