Mais Pecorino est aussi le nom d&rsquo;un c\u00e9page. Celui-ci est r\u00e9pandu dans le centre de l&rsquo;Italie : on le trouve dans les <a title=\"R\u00e9gion Marches chez Gustini\" href=\"\/regionen\/marken.html\">Marches<\/a> (provinces d&rsquo;Ancona, Ascoli Piceno et Macerata), les <a title=\"R\u00e9gion Abruzzes chez Gustini\" href=\"\/regionen\/abruzzen.html\">Abruzzes<\/a> (provinces de Chieti, L&rsquo;Aquila et Teramo), le <a title=\"R\u00e9gion Latium chez Gustini\" href=\"\/products\/region\/index\/id\/11\/\">Latium<\/a> (province de Chieti) et en Ombrie. En 2000, les Marches d\u00e9tenaient la plus grande partie de la superficie cultiv\u00e9e, qui s&rsquo;\u00e9levait au total \u00e0 87 ha. On suppose que le c\u00e9page est originaire des Marches. Le nom proviendrait apparemment du fait que les moutons (en italien <em>pecora<\/em> pour <em>mouton<\/em>) mangent les raisins des vignes.<br \/>\nLe c\u00e9page blanc Pecorino est pr\u00e9coce, mais fournit seulement de faibles rendements fluctuants. Les vins poss\u00e8dent une bonne teneur min\u00e9rale et une acidit\u00e9 prononc\u00e9e, qui est cependant parfois masqu\u00e9e par leur douceur. Le vin blanc Pecorino est d&rsquo;une couleur jaune profond. Caract\u00e9ristique \u00e9galement, une agr\u00e9able note am\u00e8re qui persiste longtemps en bouche.
