Dans le sud de l&rsquo;Italie, on sait comment se rafra\u00eechir et se refroidir lors des chaudes soir\u00e9es d&rsquo;\u00e9t\u00e9. La vari\u00e9t\u00e9 de citron privil\u00e9gi\u00e9e pour la fabrication du Limoncello sud-italien est le Femminello St. Teresa, \u00e9galement connu sous le nom de citron de Sorrente. Il est particuli\u00e8rement riche en huile de citron, qui lib\u00e8re ses ar\u00f4mes dans l&rsquo;alcool. Pour la fabrication de cette liqueur de citron, on fait mac\u00e9rer la peau (il est tr\u00e8s important d&rsquo;utiliser uniquement la peau jaune et non la couche blanche am\u00e8re en dessous) dans de l&rsquo;alcool \u00e0 95 %. La peau d&rsquo;environ cinq gros citrons est n\u00e9cessaire pour pr\u00e9parer un litre de Limoncello. L&rsquo;huile de citron est lib\u00e9r\u00e9e par l&rsquo;alcool, donnant \u00e0 ce dernier une couleur jaune intense. Ensuite, l&rsquo;alcool est m\u00e9lang\u00e9 avec du sirop simple.<\/p>\n<figure id=\"attachment_7398\" aria-describedby=\"caption-attachment-7398\" style=\"width: 425px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-7398\" src=\"\/blog\/wp-content\/uploads\/2014\/05\/Limoncello.jpg\" alt=\"limoncello\" width=\"425\" height=\"425\"><figcaption id=\"caption-attachment-7398\" class=\"wp-caption-text\">Limoncello<\/figcaption><\/figure>\n<h2>Limoncello de la c\u00f4te Amalfitaine<\/h2>\n<p>La production de Limoncello se concentre naturellement en Italie dans les r\u00e9gions o\u00f9 les citrons ad\u00e9quats sont cultiv\u00e9s : sur la c\u00f4te Amalfitaine, au golfe de Naples, sur la p\u00e9ninsule de Sorrente (Campanie) ainsi que sur les \u00eeles d&rsquo;Ischia, Capri et Procida. En outre, il est \u00e9galement produit en Sicile, dans les Pouilles, en Sardaigne et en dehors de l&rsquo;Italie \u00e0 Menton (France) et sur l&rsquo;\u00eele maltaise de Gozo.<\/p>\n<h2>Comment servir correctement le Limoncello<\/h2>\n<p>Le Limoncello est conserv\u00e9 dans le cong\u00e9lateur. Servi glac\u00e9, il est une merveilleuse boisson fruit\u00e9e et rafra\u00eechissante lors des chaudes journ\u00e9es d&rsquo;\u00e9t\u00e9. Il est g\u00e9n\u00e9ralement servi comme ap\u00e9ritif ou digestif ; sur la c\u00f4te Amalfitaine, il est servi dans des verres en c\u00e9ramique r\u00e9frig\u00e9r\u00e9s. Ce liqueur jaune vif est \u00e9galement utilis\u00e9 dans la pr\u00e9paration de tartes, cr\u00e8mes glac\u00e9es et autres desserts. En Ligurie, par exemple, il existe une recette pour le Tiramis\u00f9 al Limoncino.
