La recette classique de polenta, avec de la semoule de ma\u00efs, serait originaire du Frioul. Une variante sp\u00e9ciale de la polenta est celle avec du sarrasin, appel\u00e9e polenta taragna. Le sarrasin est une plante qui n&rsquo;est en r\u00e9alit\u00e9 pas une c\u00e9r\u00e9ale, mais en raison de son utilisation r\u00e9pandue dans le pain et d&rsquo;autres plats \u00e0 base de c\u00e9r\u00e9ales, le nom s&rsquo;est ainsi d\u00e9velopp\u00e9. Ses fruits ressemblent \u00e0 de petites faines, d&rsquo;o\u00f9 vient ce nom.<\/p>\n<figure id=\"attachment_7385\" aria-describedby=\"caption-attachment-7385\" style=\"width: 425px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-7385\" src=\"\/blog\/wp-content\/uploads\/2014\/05\/Polenta-Buchweizen.jpg\" alt=\"polenta taragna\" width=\"425\" height=\"425\"><figcaption id=\"caption-attachment-7385\" class=\"wp-caption-text\">Polenta taragna<\/figcaption><\/figure>\n<h2>Polenta taragna<\/h2>\n<p>Le sarrasin est particuli\u00e8rement r\u00e9pandu dans la Valteline (en italien : Valtellina). Peut-\u00eatre connaissez-vous les p\u00e2tes au sarrasin Pizzoccheri. En raison de l&rsquo;utilisation du sarrasin (ital. <em>grano saraceno<\/em>), elles n&rsquo;ont peut-\u00eatre pas la couleur la plus attirante, mais pr\u00e9par\u00e9es correctement (par exemple, comme des <a title=\"Recette Pizzoccheri alla valtellinese\" href=\"\/pizzoccheri-nach-art-des-valtellina-r223.html\">Pizzoccheri alla Valtellina<\/a>), elles sont d\u00e9licieuses.<br \/>\nToutefois, la polenta taragna n&rsquo;est pas compos\u00e9e \u00e0 100% de sarrasin, mais le sarrasin moulu est m\u00e9lang\u00e9 \u00e0 la semoule de ma\u00efs. C&rsquo;\u00e9tait important pour les agriculteurs dans les r\u00e9gions montagneuses \u2013 un plat \u00e9conomique qui pouvait les rassasier toute la journ\u00e9e.
