Ils sont pr\u00e9par\u00e9s \u00e0 partir d\u2019une p\u00e2te \u00e0 nouilles qui contient de l\u2019\u0153uf. La l\u00e9gende raconte qu&rsquo;ils auraient \u00e9t\u00e9 cr\u00e9\u00e9s en 1725 \u00e0 Bologne, lorsque un cuisinier, pr\u00e9parant \u00e0 r\u00e9aliser des tortellinis, avait d\u00e9j\u00e0 d\u00e9coup\u00e9 la p\u00e2te en carr\u00e9s. Il avait d\u00e9j\u00e0 pr\u00e9par\u00e9 la garniture, mais ses animaux domestiques l&rsquo;avaient d\u00e9vor\u00e9e. (On peut tout de m\u00eame se demander ce que les animaux domestiques faisaient dans une cuisine\u2026) Quoiqu&rsquo;il en soit, il fit contre mauvaise fortune bon c\u0153ur et roula rapidement les carr\u00e9s, cr\u00e9ant ainsi une petite p\u00e2te tubulaire.<br \/>\nLa nomination continue d&rsquo;impliquer l&rsquo;influence animale sur l&rsquo;histoire de leur cr\u00e9ation : avec leur ext\u00e9rieur rainur\u00e9, ils rappellent l&rsquo;\u0153sophage des poulets, qui se dit <em>garganel<\/em> dans le dialecte de la Romagne. D&rsquo;o\u00f9 le nom de Garganelli.<br \/>\nLes rainures sur le c\u00f4t\u00e9 externe de la p\u00e2te sont obtenues en roulant le carr\u00e9 de p\u00e2te sur une planche rainur\u00e9e (planche \u00e0 gnocchis) ou sur un cadre muni de pi\u00e8ces de bois semblables \u00e0 un peigne, \u00e0 l\u2019aide d\u2019un b\u00e2tonnet de bois.<br \/>\nDans le petit village de Codrignano, depuis 1989, se tient chaque ann\u00e9e le vendredi pr\u00e9c\u00e9dant le premier dimanche de septembre jusqu&rsquo;au mardi suivant, la Sagra del Garganello, une f\u00eate en l&rsquo;honneur de cette forme de p\u00e2te.<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_7148\" aria-describedby=\"caption-attachment-7148\" style=\"width: 425px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-7148\" src=\"\/blog\/wp-content\/uploads\/2014\/04\/2014-04-14_Garganelli.jpg\" alt=\"Garganelli avec sauce tomate\" width=\"425\" height=\"425\" \/><figcaption id=\"caption-attachment-7148\" class=\"wp-caption-text\">Garganelli avec sauce tomate<\/figcaption><\/figure>\n<h2>Recettes avec des Garganelli<\/h2>\n<p>Typiquement de la r\u00e9gion \u00c9milie-Romagne, les garganelli sont souvent servis avec des sauces au lapin ou \u00e0 la canard. Mais ils conviennent \u00e9galement tr\u00e8s bien avec des sauces au lard, \u00e0 la mani\u00e8re de l\u2019amatriciana. On peut en principe les utiliser pour des plats similaires \u00e0 ceux des penne. Que diriez-vous d&rsquo;un plat de garganelli au pesto de courgettes et scampis ?
