Ce sont des p\u00e2tes en forme de pi\u00e8ce de monnaie typiques de la cuisine ligurienne. Elles ne sont pas seulement rondes comme des monnaies, mais elles portent \u00e9galement une empreinte. L&rsquo;une des empreintes repr\u00e9sente une croix, d&rsquo;o\u00f9 leur nom de <em>croxetti<\/em>. Il existe deux variantes : les Corzetti valpolceveraschi (Croxetti de la vall\u00e9e Polcevera) qui prennent la forme d&rsquo;un huit, r\u00e9sultat d&rsquo;un pincement au milieu (semblable \u00e0 celui des farfalle), et les Croxetti del Levante, qui sont ceux estampill\u00e9s. On les appelle aussi Croxetti stampati.<\/p>\n<figure id=\"attachment_6980\" aria-describedby=\"caption-attachment-6980\" style=\"width: 425px\" class=\"wp-caption aligncenter\"><a href=\"\/blog\/wp-content\/uploads\/2014\/04\/2014-03-24_Croxetti.jpg\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-6980\" src=\"\/blog\/wp-content\/uploads\/2014\/04\/2014-03-24_Croxetti.jpg\" alt=\"croxetti stampati\" width=\"425\" height=\"425\"><\/a><figcaption id=\"caption-attachment-6980\" class=\"wp-caption-text\">Croxetti faits \u00e0 la main<\/figcaption><\/figure>\n<h2>P\u00e2tes estampill\u00e9es \u2013 Croxetti stampati<\/h2>\n<p>Traditionnellement, les deux parties du tampon \u00e9taient habilement tourn\u00e9es et sculpt\u00e9es en bois. Aujourd&rsquo;hui, il ne reste que peu d&rsquo;artisans capables de produire ces moules pour les p\u00e2tes typiques de la r\u00e9gion. L&rsquo;un de ces artisans est Pietro Bicetti, qui, dans son atelier situ\u00e9 dans la commune montagneuse de Varese Ligure (\u00e0 environ 70 km \u00e0 l&rsquo;est de Portofino), fabrique ces tampons en bois. Un ensemble est compos\u00e9 de deux pi\u00e8ces : une pour d\u00e9couper d&rsquo;abord la p\u00e2te en rondelles, et l&rsquo;autre portant le n\u00e9gatif du motif \u00e0 estamper. Les rondelles de p\u00e2te sont plac\u00e9es dessus puis on presse avec la premi\u00e8re partie afin que la p\u00e2te remplisse le moule n\u00e9gatif. Lorsqu&rsquo;on retire la pi\u00e8ce de p\u00e2te, le motif se d\u00e9tache de celle-ci. Il faut compter environ 30 \u00e0 50 \u20ac pour un jeu de tampons sculpt\u00e9s \u00e0 la main. Autrefois, les familles nobles faisaient estamper leur blason sur ces p\u00e2tes, leur permettant ainsi de servir des p\u00e2tes \u00e0 la fois personnalis\u00e9es et repr\u00e9sentatives. Les motifs ne sont pas juste d\u00e9coratifs \u2013 gr\u00e2ce \u00e0 leurs asp\u00e9rit\u00e9s, la sauce adh\u00e8re mieux \u00e0 la p\u00e2te.<br \/>\nLes croxetti peuvent \u00e9galement \u00eatre personnalis\u00e9s et sont par cons\u00e9quent un choix populaire en Ligurie pour un cadeau de mariage ou comme partie du banquet de mariage.<br \/>\nDans notre boutique, vous trouverez des Croxetti de Venturino, le moulinier d&rsquo;olives de Diano San Pietro. Sa p\u00e2te affiche \u00e9galement un blason ainsi que des \u00e9pis de bl\u00e9 parmi les motifs.<\/p>\n<h2>Recettes de Croxetti<\/h2>\n<p>La plupart des m\u00e9thodes de pr\u00e9paration pour ces p\u00e2tes estampill\u00e9es impliquent d&rsquo;une mani\u00e8re ou d&rsquo;une autre le Pesto alla genovese. Cela n&rsquo;est gu\u00e8re surprenant \u00e9tant donn\u00e9 que cette sauce pour p\u00e2tes tr\u00e8s populaire \u00e0 base de basilic, de pignons de pin et de parmesan vient \u00e9galement de Ligurie. Une autre recette pour la pr\u00e9paration des Croxetti est la <a title=\"Croxetti aux tomates, artichauts et Pesto\" href=\"\/croxetti-mit-pesto-tomaten-und-artischocken-r278.html\">combinaison des p\u00e2tes avec des artichauts, des tomates cerises et du Pesto<\/a>. La sauce <em>Tocco de funzi<\/em>, qui comprend des c\u00e8pes, des tomates et d&rsquo;autres ingr\u00e9dients, est tr\u00e8s typique de la cuisine r\u00e9gionale ligurienne.<br \/>\nPour une pr\u00e9paration rapide et simple, optez pour des <a title=\"Croxetti aux brocolis et saucisses de Vienne\" href=\"\/croxetti-mit-brokkoli-und-wiener-wuerstchen-r280.html\">Croxetti aux brocolis et saucisses de Vienne<\/a>.
