Toutefois, les gnocchis classiques sont g\u00e9n\u00e9ralement \u00e0 base de pommes de terre. La variante sarde, les Gnocchetti sardi, est quant \u00e0 elle faite avec de la <a title=\"Acheter de la farine de bl\u00e9 dur\" href=\"\/semola-di-grano-duro.html\">farine de bl\u00e9 dur<\/a>, aussi appel\u00e9e \u00ab farine jaune \u00bb. Si vous souhaitez les pr\u00e9parer vous-m\u00eame, vous aurez donc besoin de farine de bl\u00e9 dur, un peu de sel et d&rsquo;eau. Pour une p\u00e2te color\u00e9e, utilisez du jus de betterave rouge ou d&rsquo;\u00e9pinard \u00e0 la place de l&rsquo;eau, ou bien m\u00e9langez du paprika ou du curcuma \u00e0 votre pr\u00e9paration.<\/p>\n<h2>Pr\u00e9parer la p\u00e2te pour les Gnocchetti sardi<\/h2>\n<p>Pr\u00e9parez la p\u00e2te \u00e0 <a title=\"Recette de p\u00e2te \u00e0 pasta sans \u0153uf\" href=\"\/blog\/rezept-italien\/nudelteig-ohne-ei-aus-hartweizengriess\/\">pasta<\/a> comme d&rsquo;habitude. Comptez environ 100 g de farine par personne et ajoutez 50-75 ml d&rsquo;eau. De plus, il est conseill\u00e9 de poss\u00e9der une planche \u00e0 gnocchis. Cela permet vraiment de r\u00e9aliser facilement les rainures sur les gnocchis ! Divisez la p\u00e2te \u00e0 pasta en morceaux de la taille d&rsquo;un poing si vous en pr\u00e9parez une grande quantit\u00e9 et laissez-la reposer dans un sac herm\u00e9tiquement ferm\u00e9 au r\u00e9frig\u00e9rateur pendant au moins une heure. Dans l\u2019intervalle, pr\u00e9parez vos surfaces de s\u00e9chage. Utilisez de grands plateaux farin\u00e9s, des plaques \u00e0 p\u00e2tisserie recouvertes de papier sulfuris\u00e9 ou m\u00eame un \u00e9tendoir \u00e0 linge \u2013 achet\u00e9 ou fabriqu\u00e9 avec plusieurs couches de maille m\u00e9tallique fine tendue.<\/p>\n<figure id=\"attachment_6669\" aria-describedby=\"caption-attachment-6669\" style=\"width: 118px\" class=\"wp-caption alignright\"><a href=\"\/blog\/wp-content\/uploads\/2014\/02\/2014-02-24_Gnochetti-selber.jpg\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-6669 \" alt=\"faire soi-m\u00eame des gnocchetti sardi\" src=\"\/blog\/wp-content\/uploads\/2014\/02\/2014-02-24_Gnochetti-selber-118x300.jpg\" width=\"118\" height=\"300\"><\/a><figcaption id=\"caption-attachment-6669\" class=\"wp-caption-text\">Voici comment faire<\/figcaption><\/figure>\n<h2>Faire soi-m\u00eame des Gnocchetti sardi<\/h2>\n<p>Sortez ensuite la p\u00e2te, d\u00e9coupez-en un morceau de la taille d\u2019un \u0153uf de poule avec un grand couteau. Remettez le reste de la p\u00e2te dans le sac pour \u00e9viter qu&rsquo;elle ne se dess\u00e8che. Formez ensuite un rouleau du diam\u00e8tre de votre doigt. D\u00e9coupez le rouleau avec le couteau en morceaux de 7-10mm de large.<br \/>\nEnsuite, pressez le petit morceau de p\u00e2te sur la planche \u00e0 gnocchis avec votre pouce en exer\u00e7ant beaucoup de pression pour qu&rsquo;il s&rsquo;enroule et que les rainures se forment au dos. Et voil\u00e0, c&rsquo;est pr\u00eat !<br \/>\nSi vous n&rsquo;avez pas de planche \u00e0 gnocchis \u00e0 disposition, vous pouvez soit modeler le morceau de p\u00e2te en une forme ovale et plate et le presser contre une fourchette, soit suivre les instructions pour les Orecchiette, mais ne pas retourner les p\u00e2tes apr\u00e8s les avoir tir\u00e9es avec le couteau.<\/p>\n<p>Les Gnocchetti sardi frais n\u00e9cessitent environ 10 min de cuisson.
