Elles ressemblent aux Fettuccines, mais sont typiquement de 5-10 mm de large, alors que les Fettuccines peuvent mesurer jusqu&rsquo;\u00e0 un centim\u00e8tre de large. \u00c0 la Chambre de Commerce de Bologne, une r\u00e9plique dor\u00e9e d&rsquo;une Tagliatelle id\u00e9ale est expos\u00e9e, pr\u00e9cisant les mesures exactes \u00e0 1 mm en hauteur et 6 mm en largeur pour les Tagliatelles crues. Une fois cuites, elles sont l\u00e9g\u00e8rement plus larges.
