Nous utilisons aujourd&rsquo;hui la recette de Bologne, pour laquelle vous avez besoin de la <a title=\"Farine tipo 00\" href=\"\/farina-00-pasta-fresca-e-gnocchi.html\">farine pour p\u00e2tes fra\u00eeches<\/a> et des \u0153ufs. Les \u0153ufs donnent aux p\u00e2tes plus de saveur et surtout une couleur jaune intense. Utilisez un gros \u0153uf pour 100 g de farine tipo 00. Mettez les \u0153ufs au milieu et m\u00e9langez-les avec une fourchette \u00e0 la farine. Faites attention \u00e0 ce que votre \u00ab\u00a0digue de farine\u00a0\u00bb ne se rompe pas, laissant couler les \u0153ufs.<\/p>\n<p>P\u00e9trissez ensuite la p\u00e2te avec vos mains pendant environ 15 min. Cela permet d\u2019obtenir une p\u00e2te lisse, souple et jaune. Gardez toujours votre plan de travail propre : ne p\u00e9trissez pas de miettes s\u00e8ches dans la p\u00e2te; vous pouvez cependant int\u00e9grer des morceaux de p\u00e2te encore doux et humides.<\/p>\n<p>Divisez \u00e9ventuellement la p\u00e2te (selon la quantit\u00e9) \u00e0 l\u2019aide d\u2019un couteau, p\u00e9trissez \u00e0 nouveau les morceaux pour former des boules et rangez-les dans du film plastique ou des sachets cong\u00e9lation. Veillez \u00e0 bien expulser tout l\u2019air des sachets. La p\u00e2te peut \u00eatre conserv\u00e9e au r\u00e9frig\u00e9rateur au minimum 5 min ou au maximum quelques jours.<\/p>\n<figure id=\"attachment_6593\" aria-describedby=\"caption-attachment-6593\" style=\"width: 425px\" class=\"wp-caption aligncenter\"><a href=\"\/blog\/wp-content\/uploads\/2014\/02\/Tagliatelle-Part3.jpg\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-6593\" alt=\"\u00c9taler la p\u00e2te\" src=\"\/blog\/wp-content\/uploads\/2014\/02\/Tagliatelle-Part3.jpg\" width=\"425\" height=\"590\"><\/a><figcaption id=\"caption-attachment-6593\" class=\"wp-caption-text\">\u00c9taler la p\u00e2te<\/figcaption><\/figure>\n<h2>La pr\u00e9paration des Tagliatelles<\/h2>\n<h3>La m\u00e9thode traditionnelle<\/h3>\n<p>Voil\u00e0 que commence la fabrication des Tagliatelles : retirez la p\u00e2te du film, formez-la de nouveau en boule, aplatissez-la l\u00e9g\u00e8rement et \u00e9talez-la ensuite avec un rouleau \u00e0 p\u00e2tisserie farin\u00e9. &nbsp;Roulez toujours la p\u00e2te du centre vers l\u2019ext\u00e9rieur depuis votre corps. Tournez la p\u00e2te pour l\u2019\u00e9taler dans les autres directions.<\/p>\n<p>Pliez maintenant le morceau de p\u00e2te de deux c\u00f4t\u00e9s de sorte que 4-8 couches d\u2019environ 6 cm de large se forment. Prenez ensuite un couteau et coupez des bandelettes d\u2019environ 1 cm de large. Vous obtiendrez ainsi de longues bandelettes de p\u00e2tes. Vous pouvez laisser s\u00e9cher les Tagliatelles ainsi ou les enrouler en nids avant de les laisser s\u00e9cher. Sortez la p\u00e2te du film, d\u00e9coupez un morceau de la taille d\u2019une mandarine, formez un cylindre de p\u00e2te de 5 cm de diam\u00e8tre et roulez-le dans le sens de la longueur jusqu\u2019\u00e0 obtenir une \u00e9paisseur d\u2019environ 1 mm. Placez le rouleau \u00e0 rainures \u00e0 l\u2019extr\u00e9mit\u00e9 inf\u00e9rieure et faites-le rouler lentement sur la p\u00e2te avec beaucoup de pression. Ensuite, les Tagliatelles se d\u00e9tachent facilement. Prenez une extr\u00e9mit\u00e9 entre le pouce et l\u2019index et tirez vers le haut pour les d\u00e9tacher. Le r\u00e9glage ad\u00e9quat sur la machine \u00e0 p\u00e2tes d\u00e9pend de sa graduation. Les p\u00e2tes finies devraient avoir une \u00e9paisseur d\u2019environ 1 mm.<\/p>\n<p>Les Tagliatelles peuvent \u00eatre cuites imm\u00e9diatement. Portez suffisamment d\u2019eau (1 l pour 100 g de p\u00e2tes) \u00e0 \u00e9bullition, ajoutez les Tagliatelles et faites-les cuire 2-5 min. Les nids se d\u00e9tacheront.
