Le nom vient du mot italien \u00ab\u00a0Fuso\u00a0\u00bb, signifiant fuseau. Une l\u00e9gende raconte qu&rsquo;elles ont \u00e9t\u00e9 invent\u00e9es au 16\u00e8me si\u00e8cle \u00e0 Florence. Le fils d&rsquo;un cuisinier aurait, lors d&rsquo;un jeu, enroul\u00e9 des restes de p\u00e2te autour d&rsquo;aiguilles \u00e0 tricoter. Ainsi seraient n\u00e9s les fusilli ! <\/p>\n\n\n\n<p>En r\u00e9alit\u00e9, elles proviennent de Campanie. Dans le fameux berceau de la p\u00e2te, la ville de Gragnano, les spaghettis sont encore fabriqu\u00e9s \u00e0 la main de nos jours, en les roulant sur un fil puis en les s\u00e9chant. Cela semble simple, mais ce n&rsquo;est pas le cas : c&rsquo;est une question de vitesse et de force de mouvement de la main. Si on est trop lent, la forme ne sera pas correcte, si on applique trop de force, le trou caract\u00e9ristique de la p\u00e2te ne se forme pas.<\/p>\n\n\n\n<p>La fabrication est un art \u00e9lev\u00e9, un m\u00e9tier que seuls quelques-uns ma\u00eetrisent. M\u00eame de nos jours, certaines <a href=\"https:\/\/www.pastificiogentile.com\/pastificiogentile\" target=\"_blank\" rel=\"noreferrer noopener\">entreprises<\/a> r\u00e9servent une partie de leur usine \u00e0 la transmission de cette tradition. L&rsquo;art de la pr\u00e9paration n&rsquo;est vraiment pas simple, raison pour laquelle les familles ais\u00e9es faisaient appel \u00e0 des femmes de maison sp\u00e9cialis\u00e9es pour appr\u00e9cier de parfaites fusilli.<\/p>\n\n\n\n<p>Les fusilli faites \u00e0 la main sont d&rsquo;ailleurs beaucoup plus longues que celles trouv\u00e9es en supermarch\u00e9. Le format plus court est facilement produit par machine, moins sujet \u00e0 la cassure et donc bien plus adapt\u00e9 pour la vente de masse.<\/p>\n\n\n\n<div data-sku=\"68059,72453,68057,72511\" data-name=\"Ce dont vous avez besoin pour des fusilli parfaites\" class=\"wp-block-gustini-products-sku\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Fusilli et Spirelli, est-ce la m\u00eame chose ?<\/h2>\n\n\n\n<p>En Italie, vous ne pourrez pas acheter de Spirelli. Le mot Spirelli est une invention allemande. Le Duden indique qu&rsquo;il s&rsquo;agit d&rsquo;une \u00ab\u00a0formation de mots en italien, techniquement incorrecte, d\u00e9riv\u00e9e de spirale\u00a0\u00bb. Nous supposons qu&rsquo;il s&rsquo;agit d&rsquo;une cr\u00e9ation linguistique de la RDA, qui s&rsquo;est ensuite diffus\u00e9e dans toute l&rsquo;Allemagne. Cependant, si vous achetez des fusilli produites industriellement, vous obtiendrez exactement les p\u00e2tes que vous comprenez sous le terme Spirelli.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Quelle sauce pour les fusilli ?<\/h2>\n\n\n\n<p>Leur forme torsad\u00e9e rend les fusilli id\u00e9ales pour \u00eatre pr\u00e9par\u00e9es avec des sauces qui p\u00e9n\u00e8trent directement dans les rainures des p\u00e2tes. Parmi les recettes les plus c\u00e9l\u00e8bres, on retrouve \u00ab\u00a0alla napoletana\u00a0\u00bb (sauce tomate avec bacon et ricotta), \u00ab\u00a0alla molisana\u00a0\u00bb (sauce tomate avec agneau) et \u00ab\u00a0al forno\u00a0\u00bb (gratin\u00e9es dans une sauce tomate au fromage).
