C&rsquo;est la forme tordue qui est responsable des deux noms. Fusilli signifie essentiellement <em>petites broches<\/em> (de <em>fuso<\/em> pour <em>broche<\/em>). S&rsquo;ils ont \u00e9t\u00e9 ainsi nomm\u00e9s parce qu&rsquo;ils ressemblent au fil enroul\u00e9 autour d&rsquo;une broche ou parce que la p\u00e2te traditionnellement est enroul\u00e9e \u00e0 la main autour d&rsquo;une tige, cela, je l&rsquo;ignore. Les plus traditionnels sont des p\u00e2tes longues qui ressemblent vraiment \u00e0 de tr\u00e8s longs tire-bouchons. C&rsquo;est le cas des Fusilli : \u00c0 la cour du Duc de Florence Cosimo I. de\u2018 Medici, le cuisinier aurait pr\u00e9par\u00e9 de la p\u00e2te \u00e0 p\u00e2tes dont une partie serait tomb\u00e9e sur le sol. Son petit fils l&rsquo;aurait ramass\u00e9e et enroul\u00e9e autour de l&rsquo;aiguille \u00e0 tricoter de sa <em>Nonna<\/em> (=grand-m\u00e8re). Comme mentionn\u00e9 ci-dessus, cette forme de p\u00e2tes se pr\u00eate bien aux salades de p\u00e2tes. Mais elle convient aussi tr\u00e8s bien \u00e0 une sauce <a title=\"Recette alla napoletana\" href=\"http:\/\/www.gustini.de\/fusilli-aus-neapel-r247.html\">alla napoletana<\/a>. On peut aussi pr\u00e9parer des sauces avec du Ricotta pour Spirelli. Les sauces typiquement sud-italiennes \u00e0 base de tomates avec des aubergines, des poivrons, des olives et des c\u00e2pres comme les Fusilli alla siracusiana sont \u00e9galement populaires. Le fait qu&rsquo;elles peuvent aussi \u00eatre d\u00e9gust\u00e9es avec de la viande est prouv\u00e9 par la recette <a href=\"http:\/\/www.gustini.de\/fusilli-mit-entenbrust-und-brokkoli-r228.html\">Fusilli avec poitrine de canard et brocoli<\/a>.
