Sur ce point, le vin mousseux fran\u00e7ais a une longueur d&rsquo;avance sur son fr\u00e8re italien, le Franciacorta. Ce n&rsquo;est pas surprenant, car le vin mousseux du nord de l&rsquo;Italie est produit depuis le 17e si\u00e8cle, alors que la production de vin mousseux autour du lac d&rsquo;Iseo en Lombardie n&rsquo;existe que depuis environ 50 ans. Cette histoire doit beaucoup \u00e0 l&rsquo;\u0153nologue Franco Ziliani, qui a reconnu le potentiel des sols riches en min\u00e9raux et a su convaincre les vignerons de cultiver les c\u00e9pages Pinot Nero, Chardonnay et Pinot Bianco.<\/p>\n<h2>Franciacorta \u2013 Vin mousseux selon la m\u00e9thode champenoise<\/h2>\n<p>Les vins mousseux ne sont pas inhabituels en Italie. Mais pourquoi le Franciacorta lombard est-il appel\u00e9 <em>champagne italien<\/em> ? Cela r\u00e9side dans la m\u00e9thode champenoise. Les mo\u00fbts des c\u00e9pages Pinot nero, Pinot bianco et Chardonnay sont ferment\u00e9s s\u00e9par\u00e9ment dans des f\u00fbts en bois ou des cuves en acier inoxydable. Ensuite, le ma\u00eetre de chai pr\u00e9pare une cuv\u00e9e des trois vari\u00e9t\u00e9s, qui est mise en bouteilles. En ajoutant du sucre de canne et de la levure, une deuxi\u00e8me fermentation est induite dans la bouteille, cr\u00e9ant du dioxyde de carbone, qui ne peut pas s&rsquo;\u00e9chapper. Pour retirer les r\u00e9sidus de levure de la bouteille, elle est secou\u00e9e avec le bouchon vers le bas pour d\u00e9placer la levure dans le goulot. Le goulot est ensuite gel\u00e9, le bouchon retir\u00e9 et la levure expuls\u00e9e. Toutefois, ces trois vins mousseux subissent leur seconde fermentation, responsable de la formation du dioxyde de carbone, non pas selon la m\u00e9thode champenoise en bouteille, mais en cuve d&rsquo;acier (<em>M\u00e9thode charmat<\/em>).
