J&rsquo;utilise les guillemets pour mati\u00e8res premi\u00e8res, car il s&rsquo;agit, en plus des vari\u00e9t\u00e9s de fruits et l\u00e9gumes, parfois aussi d&rsquo;animaux. Cela a \u00e9t\u00e9 le cas chez Busti, la petite fromagerie situ\u00e9e dans la province de Livourne en Toscane. L\u00e0, nous avons pu go\u00fbter \u00e0 un merveilleux <a title=\"Pecorino\" href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&#038;aktion=Suche&#038;rubrik1=Suche&#038;rubrik2=pecorino\">Pecorino<\/a> (de l&rsquo;italien <em>pecora<\/em> pour \u00ab\u00a0mouton\u00a0\u00bb) provenant de trois diff\u00e9rentes races ovines. Ensuite, nous avons eu l&rsquo;occasion de voir les diff\u00e9rentes races de moutons que Busti utilise pour la production laiti\u00e8re.<\/p>\n<figure id=\"attachment_5808\" aria-describedby=\"caption-attachment-5808\" style=\"width: 423px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-5808\" alt=\"Race ovine Sarda\" src=\"\/blog\/wp-content\/uploads\/2013\/12\/Schaf-Sarda.jpg\" width=\"423\" height=\"283\" \/><figcaption id=\"caption-attachment-5808\" class=\"wp-caption-text\">Race ovine Sarda<\/figcaption><\/figure>\n<h2>Les races ovines Massese et Sarda<\/h2>\n<p>Trois races de moutons sont \u00e9lev\u00e9es chez Busti : Massese, Sarda et Garfagnina. Nous avions d\u00e9j\u00e0 vu quelques-uns de ces moutons dans les champs sur le chemin menant \u00e0 la fromagerie. Les diff\u00e9rences avec les moutons blancs que nous avons ici nous avaient d\u00e9j\u00e0 frapp\u00e9s. Benedetta nous a expliqu\u00e9 les caract\u00e9ristiques de ces animaux. La race <strong>Massese<\/strong>, par exemple, a toujours un pelage noir, gris ou brun. Tant les m\u00e2les que les femelles ont des cornes, parfois assez impressionnantes. Leur nez \u00ab romain \u00bb est tr\u00e8s caract\u00e9ristique. Ils sont utilis\u00e9s \u00e0 la fois comme source de lait et pour la production de viande. La race <strong>Sarda<\/strong>, en revanche, a un pelage blanc. Comme son nom peut le laisser supposer, cette race vient de Sardaigne, mais est \u00e9lev\u00e9e dans toute l&rsquo;Italie et au-del\u00e0 pour son excellente production de lait. Son pelage long est \u00e9galement utilis\u00e9 pour la production de laine. Vraiment un animal pratique, ce mouton.<\/p>\n<h2>La race ovine Garfagnina<\/h2>\n<p>La troisi\u00e8me race de moutons de la s\u00e9rie est la Garfagnina ou Garfagnina bianca. Elle porte le nom du lieu Garfagnana dans la province de Lucques en Toscane. La race est apparent\u00e9e \u00e0 la race Massese. Cette race ovine autochtone de Toscane \u00e9tait devenue rare au cours du 20\u00e8me si\u00e8cle \u2013 il n&rsquo;y avait plus que 50 animaux de race pure en 1983 ! Quelques \u00e9leveurs de moutons \u2013 y compris la famille Busti \u2013 se sont cependant remis \u00e0 appr\u00e9cier l&rsquo;ancienne race et ont recommenc\u00e9 \u00e0 l&rsquo;\u00e9lever. Ainsi, en 2013, il y avait d\u00e9j\u00e0 de nouveau 356 animaux, dont 50 chez la famille Busti. Pour comparaison &#8211; la race Sarda comptait en 2013, selon le livre g\u00e9n\u00e9alogique, 225 207 individus.<\/p>\n<p>Le Pecorino &#8211; l&rsquo;une des plus anciennes sortes de fromage italien &#8211; nous ne l&rsquo;avons pas seulement de la famille Busti de Toscane dans notre assortiment, mais de nombreuses autres r\u00e9gions italiennes.<\/p>\n<p><!-- END --><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dans son article, l&rsquo;auteur d\u00e9crit sa d\u00e9couverte de trois races ovines rares chez Busti, une fromagerie toscane de la province de Livourne.
