Ce nom provient du grec et signifie <em>Lieu des algues<\/em>. Tr\u00e8s t\u00f4t, la ville, enrichie par la production de sel, devint un si\u00e8ge \u00e9piscopal. Le sel \u00e9tait souvent, au Moyen \u00c2ge, le seul moyen de conserver les aliments p\u00e9rissables tels que la viande plus longtemps. Les salines de Cervia (ou Ficocle) et le sel de Cervia furent r\u00e9guli\u00e8rement au c\u0153ur de nombreux conflits. Chacun voulait obtenir le contr\u00f4le de la production de sel, car le sel signifiait la richesse.<\/p>\n<figure id=\"attachment_5662\" aria-describedby=\"caption-attachment-5662\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-5662\" alt=\"sale di cervia Salzspeicher\" src=\"\/blog\/wp-content\/uploads\/2013\/10\/cervia-salzspeicher.jpg\" width=\"400\" height=\"268\" \/><figcaption id=\"caption-attachment-5662\" class=\"wp-caption-text\">Ancien entrep\u00f4t de sel \u00e0 Cervia<\/figcaption><\/figure>\n<h2>Ancienne et nouvelle Cervia<\/h2>\n<p>L&rsquo;ancienne ville \u00e9tait effectivement localis\u00e9e directement au sein des salines. Une digue naturelle entourait Cervia au Moyen \u00c2ge, ce qui limitait l&rsquo;espace et conduisait \u00e0 de nombreuses \u00e9pid\u00e9mies. Cette perte de main-d&rsquo;\u0153uvre incita le pape Innocent XII, par d\u00e9cret en novembre 1697, \u00e0 ordonner l&rsquo;abandon de l&rsquo;ancienne colonie et une r\u00e9installation vers l&rsquo;est, sur le site actuel de la ville. Ainsi naquit une ville planifi\u00e9e avec une disposition rectangulaire, comprenant une station de police, un h\u00f4pital, un abattoir et un th\u00e9\u00e2tre. Une tour nomm\u00e9e d&rsquo;apr\u00e8s Saint Michel servait \u00e0 anticiper l&rsquo;approche des pirates \u00e0 temps.<\/p>\n<figure id=\"attachment_5663\" aria-describedby=\"caption-attachment-5663\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-5663\" alt=\"cervia meersalz\" src=\"\/blog\/wp-content\/uploads\/2013\/10\/cervia-salz.jpg\" width=\"400\" height=\"265\" \/><figcaption id=\"caption-attachment-5663\" class=\"wp-caption-text\">Cervia &#8211; Sel marin<\/figcaption><\/figure>\n<h2>Le sel doux de Cervia<\/h2>\n<p>Le sel doux de Cervia \u2013 cette appellation suscite l\u00e9gitimement l&rsquo;\u00e9tonnement. On penserait \u00e0 quelque chose soit doux, soit sal\u00e9. Pourtant, avec l&rsquo;expression <em>sale dolce<\/em>, il ne s&rsquo;agit pas de l&rsquo;opposition au doux, mais plut\u00f4t au amer. La teneur en chlorure de sodium est exceptionnellement haute, avec 97%, rendant le sel particuli\u00e8rement pur et donc moins amer que d&rsquo;autres <a title=\"Meersalz bestellen\" href=\"http:\/\/www.gustini.de\/sortiment\/kraeuter-gewuerze-und-salz.html\">sels marins<\/a>. Il est particuli\u00e8rement adapt\u00e9 comme gros sel marin pour la pr\u00e9paration des plats en cro\u00fbte de sel.
