Ajouter l&rsquo;oignon et l&rsquo;ail et les faire suer environ 10 min. Ajouter la sauce soja et la sauge hach\u00e9e, puis augmenter le feu et continuer \u00e0 cuire tout en remuant constamment pendant environ 3-5 min. Transf\u00e9rer le m\u00e9lange dans un bol et le laisser refroidir. Ensuite, incorporer la pur\u00e9e de citrouille, le parmesan et la chapelure, et assaisonner de sel et de poivre. Incorporer un blanc d&rsquo;\u0153uf et r\u00e9server. \u00c9taler la p\u00e2te \u00e0 p\u00e2tes ou la passer dans une machine \u00e0 p\u00e2tes et d\u00e9couper des bandes d&rsquo;environ 8 cm de c\u00f4t\u00e9 (selon le diam\u00e8tre de l&#8217;emporte-pi\u00e8ce).<\/p><\/li><li><p>Mettre une cuill\u00e8re \u00e0 soupe de farce \u00e0 environ 10 cm d&rsquo;intervalle. Poser une deuxi\u00e8me couche de bandes de p\u00e2te, presser l\u00e9g\u00e8rement les bords et former des raviolis ronds ou carr\u00e9s avec l&#8217;emporte-pi\u00e8ce. Si aucun d\u00e9coupoir \u00e0 p\u00e2tes ou aucune forme \u00e0 raviolis n&rsquo;est disponible, on peut aussi d\u00e9couper des carr\u00e9s dans la p\u00e2te, puis les plier en triangles. Dans ce cas, badigeonner les bords avec du blanc d&rsquo;\u0153uf et presser avec une fourchette.<\/p><\/li><li><p>Emballer les raviolis finis dans du film plastique et les laisser au r\u00e9frig\u00e9rateur pendant au moins 1 heure. (Peuvent \u00e9galement \u00eatre congel\u00e9s \u00e0 ce stade !) Pour les cuire, porter une casserole d&rsquo;eau sal\u00e9e \u00e0 \u00e9bullition, mettre d\u00e9licatement les raviolis dans la casserole et les cuire jusqu&rsquo;\u00e0 ce qu&rsquo;ils remontent \u00e0 la surface. (Cela ne prend que environ 3 min.) \u00c9goutter l\u00e9g\u00e8rement.<\/p><\/li><li><p>Pour le beurre \u00e0 la sauge, faire fondre le beurre \u00e0 feu moyen dans une casserole, ajouter les feuilles de sauge et laisser mijoter 2-3 min.
