Le Pecorino siciliano DOP, dont la production remonte \u00e0 l&rsquo;antiquit\u00e9 grecque sur l&rsquo;\u00eele ensoleill\u00e9e, jouit \u00e9galement d&rsquo;une tr\u00e8s longue tradition. En Sardaigne, la vari\u00e9t\u00e9 <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=pecorino+sardo\">Pecorino sardo DOP<\/a> s&rsquo;est impos\u00e9e, tandis qu&rsquo;en Toscane, c&rsquo;est le <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=pecorino+toscano\">Pecorino toscano DOP<\/a> qui pr\u00e9domine. Le processus de fabrication est naturellement similaire, mais il existe de subtiles diff\u00e9rences gustatives qui sont principalement li\u00e9es \u00e0 l&rsquo;alimentation des brebis dont le lait est utilis\u00e9 pour la fabrication.<br \/>\nPuisque les brebis et les ch\u00e8vres ne suffisent plus aux exigences actuelles de l&rsquo;industrie laiti\u00e8re, du lait de vache est \u00e9galement utilis\u00e9 dans certaines variations.
