Elle d\u00e9signe au sein de l&rsquo;Union europ\u00e9enne les produits agricoles et autres aliments dont la fabrication suit un processus sp\u00e9cifique, limit\u00e9 \u00e0 une r\u00e9gion g\u00e9ographique donn\u00e9e.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Des sp\u00e9cialit\u00e9s italiennes connues portant le sceau DOP incluent le <a href=\"\/sortiment\/italienischer-kaese\/parmigiano-reggiano.html\">Parmigiano Reggiano<\/a>, le <a href=\"\/sortiment\/italienische-wurst\/prosciutto-am-stueck.html\">Prosciutto di Parma<\/a> (=jambon de Parme), la <a href=\"\/bueffelmozzarella-mozzarella-di-bufala-bueffelmilch-250g.html\">Mozzarella di bufala<\/a> (=mozzarella de bufflonne) et les <a href=\"\/san-marzano-tomaten-pomodoro-dell-agro-sarnese-nocerino-dop.html\">tomates San-Marzano<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L&rsquo;histoire de la DOP<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Les appellations d&rsquo;origine prot\u00e9g\u00e9es ou, en italien, les <strong>DOP<\/strong> s&rsquo;inspirent du syst\u00e8me des appellations fran\u00e7aises. Ces AOC (=<em>Appellation d\u2019Origine Contr\u00f4l\u00e9e<\/em>) sont surtout connues pour les vins, mais leur origine remonte \u00e0 la protection du fromage Roquefort au 15\u00e8me si\u00e8cle. Nomm\u00e9 d&rsquo;apr\u00e8s son lieu d&rsquo;origine, ce fromage \u00e0 p\u00e2te persill\u00e9e est depuis des si\u00e8cles pris\u00e9 par les gourmets et donc relativement cher, ce qui a incit\u00e9 les producteurs de fromages \u00e0 p\u00e2te persill\u00e9e d&rsquo;autres r\u00e9gions \u00e0 vouloir profiter de la r\u00e9putation du Roquefort en nommant leur produit de la m\u00eame fa\u00e7on.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>M\u00eame si tous les producteurs de fromages \u00e0 p\u00e2te persill\u00e9e utilisent des cultures de moisissures de l&rsquo;esp\u00e8ce <em>Penicillium roqueforti<\/em>, l&rsquo;\u00e9levage et surtout l&rsquo;alimentation des brebis sont d\u00e9terminants pour le go\u00fbt du fromage. Il en va de m\u00eame pour d&rsquo;autres produits prot\u00e9g\u00e9s par le sceau DOP : dans le cas des produits carn\u00e9s et laitiers, l&rsquo;\u00e9levage des animaux est r\u00e9glement\u00e9 dans les statuts de chaque consortium en ce qui concerne la r\u00e9gion et l&rsquo;alimentation.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les sp\u00e9cialit\u00e9s DOP d&rsquo;Italie et d&rsquo;Allemagne<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">De nombreuses <strong>sp\u00e9cialit\u00e9s<\/strong> italiennes de fromages et de charcuteries portent leur origine d\u00e9j\u00e0 dans leur nom : Prosciutto di Parma, Prosciutto di San Daniele, Parmigiano Reggiano, <a href=\"\/pecorino-romano-d-o-p.html\">Pecorino romano<\/a>, <a href=\"\/pecorino-sardo-maturo-d-o-p.html\">Pecorino Sardo<\/a> ou <a href=\"\/sortiment\/italienischer-kaese\/blauschimmelkaese.html\">Gorgonzola<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Certaines de ces sp\u00e9cialit\u00e9s sont si appr\u00e9ci\u00e9es que leur nom est utilis\u00e9 de mani\u00e8re g\u00e9n\u00e9rique pour tous les produits similaires, ce qui est difficile \u00e0 \u00e9viter dans le langage courant. Mais pour les producteurs fiers, cela doit \u00eatre un coup de couteau dans le c\u0153ur quand un fromage r\u00e2p\u00e9 de production bon march\u00e9 est appel\u00e9 <em>Parmesan<\/em>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mais les sp\u00e9cialit\u00e9s de fromage et de charcuterie b\u00e9n\u00e9ficiant d&rsquo;une appellation d&rsquo;origine prot\u00e9g\u00e9e ne viennent pas seulement d&rsquo;Italie ; les fromageries et les charcuteries allemandes ont \u00e9galement fait prot\u00e9ger leurs produits par l&rsquo;UE : Parmi les produits allemands connus, citons donc le fromage de ch\u00e8vre d&rsquo;Altenburg, le fromage de montagne de l&rsquo;Allg\u00e4u et la Heidschnucke de L\u00fcneburg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Un niveau en dessous de l&rsquo;appellation d&rsquo;origine prot\u00e9g\u00e9e se trouvent les produits b\u00e9n\u00e9ficiant d&rsquo;une indication g\u00e9ographique prot\u00e9g\u00e9e.
