Les truffes, pendant la saison, sont un produit frais dont le prix dans notre boutique d\u00e9pend de ceux en Ombrie et du taux de d\u00e9couverte. Le plus noble de tous les champignons a son prix, mais si on les d\u00e9guste uniquement en saison, l&rsquo;exp\u00e9rience devient particuli\u00e8rement exclusive et intense. Pour ceux qui trouvent la saison des truffes trop courte, notre boutique offre \u00e9galement d&rsquo;autres produits \u00e0 base de truffes disponibles tout au long de l&rsquo;ann\u00e9e.<br \/>\nJ&rsquo;ai rapport\u00e9 une recette de mon voyage dans les terres de truffes autour d&rsquo;Alba : <strong>Omelette aux truffes<\/strong>.<\/p>\n<h2>Omelette aux truffes \u2013 les ingr\u00e9dients<\/h2>\n<p>On pourrait croire qu&rsquo;il n&rsquo;y a gu\u00e8re de recette plus simple \u00e0 pr\u00e9parer qu&rsquo;une omelette. Mais d\u00e9trompez-vous ! Une v\u00e9ritable bonne <strong>omelette aux truffes<\/strong> n\u00e9cessite de bons <strong>ingr\u00e9dients<\/strong>, du temps et \u00e9galement du savoir-faire. D&rsquo;ailleurs, pourquoi la combinaison de truffes et d&rsquo;\u0153ufs est si populaire : les \u0153ufs utilis\u00e9s intensifient l&rsquo;ar\u00f4me noble de la truffe. Une autre raison, comme me l&rsquo;a dit un chercheur de truffes en Ombrie, est tout \u00e0 fait pragmatique : on a g\u00e9n\u00e9ralement dans sa maison la plupart des ingr\u00e9dients n\u00e9cessaires pour une omelette aux truffes. Voici les ingr\u00e9dients pour 2 personnes :<br \/>\n+ 6 \u0153ufs<br \/>\n+ 30g de <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=perigordtrueffel\">truffes du P\u00e9rigord<\/a><br \/>\n+ <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=meersalz\">Sel<\/a>, <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=pfeffer+pepe\">Poivre<\/a><br \/>\n+ huile v\u00e9g\u00e9tale neutre en go\u00fbt (par exemple, huile de tournesol, <span style=\"text-decoration: underline;\">pas<\/span> d&rsquo;huile d&rsquo;olive).<\/p>\n<figure id=\"attachment_4040\" aria-describedby=\"caption-attachment-4040\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-4040\" title=\"trueffelomelett\" alt=\"Omelette aux truffes\" src=\"\/blog\/wp-content\/uploads\/2012\/11\/trueffelomelett.jpg\" width=\"400\" height=\"265\" \/><figcaption id=\"caption-attachment-4040\" class=\"wp-caption-text\">Omelette aux truffes<\/figcaption><\/figure>\n<h2>Pr\u00e9paration de l&rsquo;omelette aux truffes<\/h2>\n<p>Selon que vous souhaitiez servir <strong>l&rsquo;omelette<\/strong> pour le d\u00e9jeuner ou pour le d\u00eener, commencez les pr\u00e9paratifs la veille ou le matin. Pour cela, cassez les \u0153ufs dans un bol et rapez les <strong>truffes<\/strong> pr\u00e9alablement nettoy\u00e9es avec une brosse ou un torchon de cuisine dessus. Puis, couvrez le bol et mettez-le au r\u00e9frig\u00e9rateur pendant 12 heures. Ainsi, les \u0153ufs peuvent s\u2019impr\u00e9gner pleinement des ar\u00f4mes de truffe.<br \/>\nSortez le bol du r\u00e9frig\u00e9rateur et m\u00e9langez le sel et le poivre avec les \u0153ufs \u00e0 l&rsquo;aide d&rsquo;une fourchette. Il ne devrait pas en r\u00e9sulter une masse homog\u00e8ne d&rsquo;\u0153ufs battus, donc ne m\u00e9langez pas trop vigoureusement.<br \/>\nChauffez l&rsquo;huile v\u00e9g\u00e9tale dans une grande po\u00eale, id\u00e9alement en fonte. Ensuite, versez le m\u00e9lange d\u2019\u0153ufs dans la po\u00eale. D\u00e8s qu&rsquo;il commence \u00e0 prendre sur le dessous, baissez le feu et laissez cuire 5 minutes de plus.<br \/>\nPour retourner l&rsquo;omelette, faites-la glisser soigneusement sur un grand plat. Tenez la po\u00eale \u00e0 l\u2019envers par-dessus et maintenez le plat contre. Puis, retournez le tout habilement, de sorte que le fond de la po\u00eale soit de nouveau en bas.
