Elles atteignent leur maturit\u00e9 optimale \u2013 selon les conditions m\u00e9t\u00e9orologiques durant la p\u00e9riode de maturation \u2013 vers la mi-d\u00e9cembre. Lorsque les mois d&rsquo;\u00e9t\u00e9 sont particuli\u00e8rement pluvieux, les truffes poussent particuli\u00e8rement bien dans le sud de la France et en Italie. La chair des truffes du P\u00e9rigord est alors color\u00e9e en noir-violet et marbr\u00e9e de veines blanches.<br \/>\nAux premi\u00e8res heures de la matin\u00e9e, les chercheurs de truffes partent avec leurs chiens sp\u00e9cialement form\u00e9s \u00e0 la recherche de ces champignons pr\u00e9cieux. Les esp\u00e8ces d&rsquo;arbres privil\u00e9gi\u00e9es sont le ch\u00eane, le noisetier, l&rsquo;\u00e9rable ou le bouleau. Pour cette r\u00e9gion, la p\u00e9riode de recherche est limit\u00e9e entre le 1er d\u00e9cembre et le 15 mars.
