La Nduja est une saucisse originaire de Calabre, d&rsquo;o\u00f9 son appellation <strong>Nduja calabrese<\/strong>. Elle est compos\u00e9e de viande de porc (principalement de l&rsquo;\u00e9paule et du ventre) et est agr\u00e9ment\u00e9e de nombreuses \u00e9pices. Le chili ou, en italien, <em>Peperoncini<\/em>, joue un r\u00f4le important dans l&rsquo;assaisonnement.<br \/>\nCette saucisse a \u00e9t\u00e9 introduite au XIIIe si\u00e8cle par la maison angevine de France. Cela donne \u00e0 la Nduja son piquant caract\u00e9ristique.<br \/>\nOn peut consommer la Nduja de la m\u00eame mani\u00e8re que le Mettwurst sur du pain ou l&rsquo;utiliser comme ingr\u00e9dient dans les sauces et les soupes. Elle se marie \u00e9galement parfaitement avec les fromages affin\u00e9s. Pour un <strong>Sugo all\u2019Nduja<\/strong>, il faut 200g de Nduja, un peu de Pancetta, 1 kg de tomates et 50 g d&rsquo;huile d&rsquo;olive. Faites chauffer l&rsquo;huile d&rsquo;olive dans une po\u00eale, faites-y revenir la Nduja et le lard, puis ajoutez les tomates coup\u00e9es en d\u00e9s et laissez mijoter le tout pendant environ 15 min.
