C&rsquo;est surtout en Toscane et en Ombrie, dans le nord de l&rsquo;Italie, avec ses vastes for\u00eats o\u00f9 foisonnent herbes sauvages et champignons, que sangliers, cerfs, daims &amp; Co se sentent bien. Jusqu&rsquo;\u00e0 l&rsquo;arriv\u00e9e des chasseurs&#8230; En Toscane, c&rsquo;est principalement la r\u00e9gion montagneuse de la Maremme o\u00f9 les sangliers, \u00e0 l&rsquo;abri des touristes, parcourent librement les bois. Leur chair est transform\u00e9e en saucisses de chasse \u00e9pic\u00e9es et en jambons aromatiques. Nous obtenons de la ville de Greve une savoureuse <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=salami+wildschwein\">salami de sanglier<\/a>.<br \/>\nEn Ombrie, les sangliers se nourrissent de glands, de ma\u00efs et de c\u00e9r\u00e9ales. La ville ombrienne de Norcia est particuli\u00e8rement r\u00e9put\u00e9e. Les bouchers de Norcia sont connus dans toute l&rsquo;Italie. La demande croissante pour la d\u00e9licatesse qu&rsquo;est la viande sauvage a conduit \u00e0 l&rsquo;\u00e9levage, par exemple, de faisans et de cerfs dans de vastes enclos.<br \/>\nDe nombreux plats \u00e0 base de gibier contiennent traditionnellement des ingr\u00e9dients qui sont \u00e9galement naturellement disponibles en automne : champignons, baies ou fruits.
