Dans ce cas, il nous faut une <strong>recette<\/strong> qui soit rapide \u00e0 pr\u00e9parer pendant que les invit\u00e9s prennent l&rsquo;ap\u00e9ritif, ou une qui peut \u00eatre pr\u00e9par\u00e9e \u00e0 l&rsquo;avance et simplement r\u00e9chauff\u00e9e au dernier moment.<br \/>\nJe recommande alors <strong>l&rsquo;aubergine au parmesan et mozzarella<\/strong>. On peut la pr\u00e9parer merveilleusement le matin et la garder au r\u00e9frig\u00e9rateur jusqu&rsquo;au soir. Lorsque les invit\u00e9s arrivent, il suffit de la r\u00e9chauffer 10 minutes au four, peut-\u00eatre accompagn\u00e9e d&rsquo;un ciabatta.<\/p>\n<figure id=\"attachment_3477\" aria-describedby=\"caption-attachment-3477\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-3477\" title=\"melanzane_alla_parmigiano\" alt=\"Aubergine au parmesan et mozzarella\" src=\"\/blog\/wp-content\/uploads\/2011\/09\/melanzane_alla_parmigiano.jpg\" width=\"400\" height=\"267\" \/><figcaption id=\"caption-attachment-3477\" class=\"wp-caption-text\">Aubergine au parmesan et mozzarella<\/figcaption><\/figure>\n<h2>Ingr\u00e9dients pour l&rsquo;aubergine au parmesan<\/h2>\n<p>Les ingr\u00e9dients sont suffisants pour 4-5 personnes.<\/p>\n<p>+ 4 grosses aubergines<br \/>\n+ <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=mehl+tipo\">Farine<\/a> pour paner les aubergines<br \/>\n+ Huile de tournesol ou <a href=\"http:\/\/www.gustini.de\/sortiment\/olivenoel-aus-italien.html\">d&rsquo;olive<\/a><br \/>\n+ 1 paquet de <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=bueffelmozzarella\">Mozzarella di bufala<\/a><br \/>\n+ <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=parmigiano+reggiano\">Parmesan<\/a> en tranches fines<br \/>\n<span style=\"text-decoration: underline;\">Pour la sauce<\/span><br \/>\n+ 700 g de <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=tomaten+dose+san+marzano\">tomates en conserve<\/a>, hach\u00e9es<br \/>\n+ 25 g de beurre<br \/>\n+ 2 \u00e9chalotes de taille moyenne, finement hach\u00e9es<br \/>\n+ 2 g (\u00bd cuill\u00e8re \u00e0 caf\u00e9) de sucre<br \/>\n+ 1 tr\u00e8s petit piment s\u00e9ch\u00e9<br \/>\n+ <a href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=meersalz\">Sel<\/a><br \/>\n+ Basilic frais<\/p>\n<p>Vous aurez aussi besoin d&rsquo;une passoire, d&rsquo;un bol, d&rsquo;une grande po\u00eale, d&rsquo;une casserole, de papier absorbant, et d&rsquo;un plat \u00e0 gratin.<\/p>\n<h2>Pr\u00e9paration<\/h2>\n<p>Couper les extr\u00e9mit\u00e9s des aubergines et les peler longitudinalement pour cr\u00e9er trois bandes sombres et trois bandes claires. Ainsi, les aubergines conservent leur forme. Puis trancher les aubergines en rondelles de 4 cm d&rsquo;\u00e9paisseur.<br \/>\nSaler les rondelles des deux c\u00f4t\u00e9s et les laisser reposer pendant 1-2 heures dans une passoire. Le sel va extraire de l&rsquo;humidit\u00e9 des aubergines ainsi qu&rsquo;une partie de leur go\u00fbt amer. Ensuite, bien rincer les aubergines et les \u00e9ponger avec du papier absorbant.<br \/>\nMettre un peu de farine dans un bol et y rouler les tranches d&rsquo;aubergine jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient recouvertes des deux c\u00f4t\u00e9s.<br \/>\nChauffer l&rsquo;huile dans une po\u00eale et y faire frire les tranches d&rsquo;aubergine pendant 3 min de chaque c\u00f4t\u00e9. Elles peuvent \u00eatre retourn\u00e9es avec une fourchette.<br \/>\nEnsuite, disposer les tranches dans un bol recouvert de papier absorbant. Le papier doit absorber une partie de l&rsquo;huile.<\/p>\n<p><strong>Pr\u00e9parer la sauce<\/strong><br \/>\nFaire fondre le beurre dans une casserole. Ajouter les \u00e9chalotes hach\u00e9es et les faire revenir 3 min.<br \/>\nAjouter les tomates et, en remuant, faire cuire quelques secondes. Ajouter le sucre et remuer \u00e0 nouveau. Ajouter une pinc\u00e9e de sel et remuer de nouveau.<br \/>\nAjouter le piment (ou du poivre moulu). Laisser la sauce mijoter 20-30 min pour la r\u00e9duire un peu.<br \/>\nIncorporer le basilic hach\u00e9.<br \/>\nVerser une couche de sauce tomate de 1 \u00e0 1 \u00bd cm d&rsquo;\u00e9paisseur dans le plat \u00e0 gratin. Disposer uniform\u00e9ment les tranches d&rsquo;aubergine dans le plat.<br \/>\nMettre une tranche de parmesan sur chaque tranche d&rsquo;aubergine.<br \/>\nCouper la mozzarella en tranches d&rsquo;environ 1 cm d&rsquo;\u00e9paisseur et les placer \u00e9galement sur les aubergines.<br \/>\nAvec une cuill\u00e8re, r\u00e9partir le reste de la sauce tomate sur chaque tranche d&rsquo;aubergine.<br \/>\nPr\u00e9chauffer le four \u00e0 190\u00b0C (thermostat 5) et faire cuire les aubergines environ 30 min.
