Traditionnellement, seule la viande de cette race bovine est utilis\u00e9e pour le steak florentin, car les Toscans jurent par la qualit\u00e9 de cette ancienne race. Et quand on observe ces animaux avec leurs cornes d\u00e9mesur\u00e9es, on pense irr\u00e9sistiblement aux repr\u00e9sentations antiques d&rsquo;animaux de trait. L&rsquo;\u00e9crivain romain Pline l&rsquo;Ancien les mentionna \u00e9galement. En dehors de la Toscane, o\u00f9 la race a son origine, elle se trouve aussi en Ombrie et dans les Marches. La <strong>Race Chianina<\/strong> tire son nom de la vall\u00e9e du Chiana en Toscane, o\u00f9, en tant que b\u0153ufs de p\u00e2turage heureux, ils fa\u00e7onnent le paysage. Avant l&rsquo;invention du tracteur, ce \u00e9taient les b\u0153ufs Chianina qui tiraient les lourds \u00e9quipements agricoles \u00e0 travers les champs, mais aujourd&rsquo;hui, ils sont exclusivement \u00e9lev\u00e9s pour la production de viande.<\/p>\n<figure id=\"attachment_2891\" aria-describedby=\"caption-attachment-2891\" style=\"width: 450px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2891\" title=\"B\u0153uf Chianina de Falorni\" src=\"\/blog\/wp-content\/uploads\/2010\/09\/falorni_chianina_rind.jpg\" alt=\"Les b\u0153ufs sont litt\u00e9ralement pr\u00e9sent\u00e9s\" width=\"450\" height=\"338\"><figcaption id=\"caption-attachment-2891\" class=\"wp-caption-text\">Les b\u0153ufs sont litt\u00e9ralement pr\u00e9sent\u00e9s<\/figcaption><\/figure>\n<h2>Caract\u00e9ristiques des b\u0153ufs Chianina<\/h2>\n<p>La Race Chianina n\u2019est pas seulement une des plus anciennes du monde (la similarit\u00e9 avec l\u2019aurochs est frappante), mais elle est \u00e9galement la plus grande de toutes les races bovines. Le plus grand taureau jamais mesur\u00e9 en 2007 atteint une hauteur au garrot de 2,05 m, inscrit dans le livre Guinness des records. En comparaison, un b\u0153uf Holstein mesure seulement environ 1,45 m de haut. Les veaux de la race Chianina naissent avec un pelage de couleur rouge\u00e2tre-brun, mais \u00e0 l\u2019\u00e2ge adulte, leur pelage devient cr\u00e8me-blanc, ce qui rend leur apparence encore plus noble.<\/p>\n<h2>Commander de la viande de Chianina<\/h2>\n<p>La viande des b\u0153ufs Chianina est un d\u00e9lice rare et donc difficile \u00e0 trouver. Nos partenaires de la boucherie Falorni \u00e0 Greve ont cependant rendu possible pour vous, clients allemands, de ramener cette saveur toscane chez vous. Mais en raison de l&rsquo;exclusivit\u00e9 de la race, il n&rsquo;est pas possible de produire les steaks en stock. Ainsi, la Bistecca Fiorentina est disponible chez nous seulement toutes les deux \u00e0 trois semaines, et une <a title=\"Pr\u00e9commander la Bistecca Fiorentina\" href=\"\/bistecca-alla-fiorentina-falorni.html\">pr\u00e9commande<\/a> est n\u00e9cessaire.<\/p>\n<p><strong><u>Post-scriptum :<\/u><\/strong><\/p>\n<p><strong>Apr\u00e8s une \u00e9troite consultation avec Stefano Falorni, le ma\u00eetre boucher de l&rsquo;Antica Macelleria Falorni, nous avons d\u00e9cid\u00e9 en 2017 de vous proposer \u00e9galement la viande de haute qualit\u00e9 des races Limousin et Charolais. Plusieurs raisons expliquent ce choix : en effet, la viande de ces races bovines est beaucoup plus tendre et juteuse.
