Il est Ma\u00eetre fromager affineur, c&rsquo;est-\u00e0-dire un ma\u00eetre dans l&rsquo;art de l&rsquo;affinage du fromage. <strong>Affineur<\/strong> est la plus haute distinction accord\u00e9e dans la guilde des fromagers. Hansi nous a permis de jeter un \u0153il derri\u00e8re les coulisses des meilleurs fromages d&rsquo;Italie et peut-\u00eatre m\u00eame du monde. Depuis 1995, il cr\u00e9e avec son \u00e9quipe, que nous allions bient\u00f4t rencontrer Edith et Sepp, ses fromages merveilleusement \u00e9pic\u00e9s.<\/p>\n<h2>Visite chez l&rsquo;affineur de fromage Hansi Baumgartner<\/h2>\n<figure id=\"attachment_2564\" aria-describedby=\"caption-attachment-2564\" style=\"width: 247px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2564\" title=\"Degust-Affineur-Edith explique\" alt=\"Edith nous explique les diff\u00e9rents fromages\" src=\"\/blog\/wp-content\/uploads\/2010\/05\/Degust-Affineur-edith-erklaert.jpg\" width=\"247\" height=\"350\" \/><figcaption id=\"caption-attachment-2564\" class=\"wp-caption-text\">Edith nous explique les fromages<\/figcaption><\/figure>\n<p><strong>Hansi Baumgartner<\/strong> est un homme \u00e9nergique et tr\u00e8s sympathique, qui semble ne penser qu&rsquo;au fromage, mais dans le bon sens du terme. L&rsquo;<strong>affineur de fromage<\/strong> nous a racont\u00e9 lors de notre visite tout ce qu&rsquo;il y a \u00e0 savoir sur les fromages \u00e0 p\u00e2te dure, les fromages frais, les fromages \u00e0 p\u00e2te fil\u00e9e, les fromages \u00e0 p\u00e2te press\u00e9e et bien d&rsquo;autres. En sa qualit\u00e9 d&rsquo;affineur, il d\u00e9veloppe constamment de nouvelles cr\u00e9ations fromag\u00e8res, comme le fromage au Gew\u00fcrztraminer ou le fromage au pain croustillant et \u00e0 la bi\u00e8re. Sa femme Edith, tout aussi sympathique, est l&rsquo;\u00e2me de Degust, qui nous a r\u00e9v\u00e9l\u00e9 quelques secrets des ar\u00f4mes du fromage pendant la d\u00e9gustation.<\/p>\n<h2>Les fromages Degust du Sud-Tyrol<\/h2>\n<figure id=\"attachment_2565\" aria-describedby=\"caption-attachment-2565\" style=\"width: 230px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2565\" title=\"Degust-Affineur-Bunker dans la for\u00eat\" alt=\"Le Bunker dans la for\u00eat\" src=\"\/blog\/wp-content\/uploads\/2010\/05\/Degust-Affineur-bunker-im-wald.jpg\" width=\"230\" height=\"283\" \/><figcaption id=\"caption-attachment-2565\" class=\"wp-caption-text\">Le Bunker dans la for\u00eat<\/figcaption><\/figure>\n<p><strong>Degust<\/strong> est l&rsquo;entreprise des deux personnalit\u00e9s en <strong>Sud-Tyrol<\/strong>. Tandis que Hansi Baumgartner sautillait de joie enfantine et de fiert\u00e9 pour ses fromages, \u00e0 peine capable de rester en place, Edith nous a pr\u00e9sent\u00e9 ses cr\u00e9ations avec soin. Elle nous a appris qu&rsquo;un affineur sait dans quel climat les animaux laitiers doivent pa\u00eetre, conna\u00eet les particularit\u00e9s de leurs races et est sp\u00e9cialis\u00e9 dans le stockage et l&rsquo;affinage du fromage. Chez Degust, les fromages sont stock\u00e9s dans un bunker s\u00e9curis\u00e9, construit pendant la Seconde Guerre mondiale et qui a d\u00e9sormais trouv\u00e9 une vocation pacifique. C&rsquo;est l\u00e0 que nous avons \u00e9galement rencontr\u00e9 Sepp, qui nettoie m\u00e9ticuleusement chaque pi\u00e8ce de fromage de son moisi et en prend grand soin.<\/p>\n<p>Un grand merci \u00e0 Edith et Hansi Baumgartner pour cette visite guid\u00e9e et d\u00e9gustation d\u00e9licieuses.
