Alors que le Panettone est consomm\u00e9 sous l&rsquo;arbre de No\u00ebl, la Colomba r\u00e9gale les palais des Italiens \u00e0 P\u00e2ques. <\/p>\n<h2> Colomba et Panettone \u2013 la diff\u00e9rence de recette<\/h2>\n<p>Comme le Panettone, la Colomba est \u00e9galement pr\u00e9par\u00e9e avec une p\u00e2te lev\u00e9e riche en farine, oeufs et beurre. Alors que le Panettone contient typiquement des raisins secs, on ne trouve pas ces derniers dans la recette du g\u00e2teau de P\u00e2ques. Ici, juste avant la cuisson, on ajoute classiquement uniquement des \u00e9corces d&rsquo;orange confites. Le couronnement est l&rsquo;\u00e9corce croquante au sucre et aux amandes cuite au four.<\/p>\n<h2> La force symbolique de la colombe<\/h2>\n<\/p>\n<p> Alors que le Panettone ressemble \u00e0 une \u00e9norme bo\u00eete \u00e0 chapeaux ronde, la forme du g\u00e2teau de P\u00e2ques est imit\u00e9e d&rsquo;une grande colombe en vol avec les ailes d\u00e9ploy\u00e9es. Le symbole du sacrifice du Christ et donc de P\u00e2ques! <\/p>\n<blockquote><p>  \u00ab\u00a0Colomba signifie colombe en italien\u00a0\u00bb <\/p><\/blockquote>\n<p> En Allemagne aussi, nous connaissons des g\u00e2teaux de P\u00e2ques avec des animaux symboliques, comme des lapins et des agneaux. La forme d&rsquo;agneau renvoie \u00e0 J\u00e9sus en tant que bon berger et aux agneaux nouveau-n\u00e9s au printemps. Au roi Alboin, pendant le si\u00e8ge de Pavie, on offrit une po\u00eale en forme de colombe comme signe de paix. <\/p>\n<p> Une autre l\u00e9gende interpr\u00e8te la colombe comme une promesse d&rsquo;assistance divine : en 1176 &#8211; pendant la bataille de Legnano &#8211; deux colombes seraient apparues aux soldats milanais luttant contre l&#8217;empereur Barberousse, comme signe de victoire\u2026 <\/p>\n<p> En r\u00e9alit\u00e9, la tradition ne remonte pas si loin : le Milanais Dino Villani a d\u00e9velopp\u00e9 ce g\u00e2teau de P\u00e2ques autour de 1930 pour une entreprise d\u00e9j\u00e0 connue pour le g\u00e2teau de No\u00ebl Panettone.
