On d\u00e9pendait des aliments conserv\u00e9s par la mise en conserve, le salage, le s\u00e9chage ou d&rsquo;autres m\u00e9thodes, ou de ceux r\u00e9colt\u00e9s \u00e0 la fin de l&rsquo;automne qui se conservaient longtemps. Traditionnellement, il y avait beaucoup de choux en Allemagne, d&rsquo;o\u00f9 la tradition du repas de chou vert perdure. Les Italiens avaient quelques avantages : d&rsquo;une part, il ne faisait pas aussi froid chez eux et ils pouvaient r\u00e9colter plus longtemps, et d&rsquo;autre part, ils avaient invent\u00e9 des denr\u00e9es pratiques comme les p\u00e2tes, qui, s\u00e9ch\u00e9es, se conservaient tr\u00e8s longtemps et offraient bien plus de vari\u00e9t\u00e9 que les pommes de terre, ou les pommes de terre, ou encore les pommes de terre. L&rsquo;un de ces plats est le <strong>Pappardelle al Cinghiale<\/strong>, des p\u00e2tes avec rag\u00f9 de sanglier. C&rsquo;est tr\u00e8s savoureux, copieux et facile \u00e0 pr\u00e9parer. Les pappardelles sont des p\u00e2tes en ruban, qui peuvent aussi \u00eatre remplac\u00e9es par des <a title=\"Commander des Tagliatelle\" href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=tagliatelle\">Tagliatelle<\/a>, car elles sont g\u00e9n\u00e9ralement plus faciles \u00e0 trouver. Faire cuire les p\u00e2tes dans de l&rsquo;eau sal\u00e9e \u2013 ne pas ajouter d&rsquo;huile, sinon la surface devient trop glissante et ne peut plus absorber la sauce. Chauffer ensuite la <a title=\"Commander du rag\u00f9 de sanglier\" href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=wildschweinsauce\">sauce de sanglier de Conserve della Nonna<\/a>. M\u00e9langer les p\u00e2tes avec la sauce et servir avec un peu de <a title=\"Parmesan\" href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=parmigiano+reggiano\">Parmesan<\/a> r\u00e2p\u00e9. Bien entendu, d&rsquo;autres types de p\u00e2tes peuvent \u00eatre utilis\u00e9s, mais je recommande vivement les p\u00e2tes de la capitale non officielle de la p\u00e2te \u2013 <a title=\"P\u00e2tes de Gragnano\" href=\"http:\/\/www.gustini.de\/index.php?auswahl=shopseite&amp;rubrik1=Suche&amp;rubrik2=gragnano\">Gragnano<\/a>.
