Le moulinier d\u2019<strong>Ombrie<\/strong> m&rsquo;avait \u00e9galement invit\u00e9 quelques mois auparavant dans sa demeure de Giano dell\u2019Umbria. Juste \u00e0 temps pour la r\u00e9colte des olives, j&rsquo;\u00e9tais l\u00e0-bas sur son seuil. Bien qu&rsquo;il f\u00fbt tr\u00e8s occup\u00e9 \u00e0 cause de la saison, Marco Farchioni a tout de m\u00eame trouv\u00e9 le temps de me faire visiter son entreprise familiale et de m&rsquo;expliquer les principales \u00e9tapes de la pression des olives.<\/p>\n<figure id=\"attachment_2099\" aria-describedby=\"caption-attachment-2099\" style=\"width: 250px\" class=\"wp-caption alignleft\"><a href=\"\/antico-frantoio-fattoria-0-5l.html\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2099\" title=\"farchioni_il_casolare\" alt=\"Il Casolare de Farchioni\" src=\"\/blog\/wp-content\/uploads\/2009\/10\/farchioni_il_casolare.jpg\" width=\"250\" height=\"281\"><\/a><figcaption id=\"caption-attachment-2099\" class=\"wp-caption-text\">Il Casolare de Farchioni<\/figcaption><\/figure>\n<h3>Huile d&rsquo;olive Farchioni \u2013 Une entreprise familiale par tradition<\/h3>\n<p>L&rsquo;<strong>entreprise familiale Farchioni<\/strong> existe depuis quatre g\u00e9n\u00e9rations dans le petit village de Giano Dell\u2019Umbria, qui compte environ 3000 \u00e2mes. Le gigantesque moulin en granit utilis\u00e9 pour presser les olives est \u00e9galement aussi ancien. Ce n&rsquo;\u00e9tait pas ma premi\u00e8re visite chez un moulinier, et j&rsquo;ai donc remarqu\u00e9 que l\u2019<strong>huile d&rsquo;olive<\/strong> de Farchioni n\u2019est pas filtr\u00e9e. Elle est mise en bouteille telle quelle, avec son aspect trouble. Une des huiles d\u2019olive de Farchioni est l&rsquo;<a href=\"\/sortiment\/olivenoel-aus-italien.html\">Il Casolare<\/a>, dont j&rsquo;ai pu repartir avec une bouteille fra\u00eechement press\u00e9e. De plus, Marco Farchioni produit \u00e9galement de l&rsquo;<a href=\"\/sortiment\/olivenoel-aus-italien.html\">huile biologique<\/a>, obtenue suivant les strictes r\u00e9gulations europ\u00e9ennes pour l&rsquo;agriculture biologique.
