{"id":1369,"date":"2009-02-07T20:29:56","date_gmt":"2009-02-07T19:29:56","guid":{"rendered":"https:\/\/gustini.fr\/blog\/generalites\/tomates-san-marzano\/"},"modified":"2009-02-07T20:29:56","modified_gmt":"2009-02-07T19:29:56","slug":"tomates-san-marzano","status":"publish","type":"post","link":"https:\/\/www.gustini.fr\/blog\/ingredients-dorigine\/tomates-san-marzano\/","title":{"rendered":"San Marzano &#8211; Portrait d&rsquo;une vari\u00e9t\u00e9 de tomate"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">L&rsquo;Histoire<\/h2>\n\n\n\n<p>Comme le nom l&rsquo;indique, il existe un lien entre la <strong>tomate San Marzano<\/strong> et le lieu \u00e9ponyme en Campanie.<\/p>\n\n\n\n<p>La l\u00e9gende raconte que les premi\u00e8res plantes sont arriv\u00e9es en Europe en 1770, offertes par le roi du P\u00e9rou au roi de Naples, et furent plant\u00e9es dans la terre fertile autour du V\u00e9suve.<\/p>\n\n\n\n<p>La culture industrielle de la tomate San Marzano a d\u00e9but\u00e9 vers 1926. Cette vari\u00e9t\u00e9 est particuli\u00e8rement adapt\u00e9e \u00e0 la mise en conserve car elle d\u00e9veloppe une profondeur d&rsquo;ar\u00f4me sp\u00e9ciale lors de la conservation.<\/p>\n\n\n\n<p>Dans les ann\u00e9es 80, des maladies ont commenc\u00e9 \u00e0 appara\u00eetre de plus en plus fr\u00e9quemment dans les champs de San Marzano pr\u00e8s du V\u00e9suve. Les agriculteurs ont alors plant\u00e9 des vari\u00e9t\u00e9s de tomates qui \u00e9taient plus r\u00e9sistantes et qui pouvaient \u00e9galement \u00eatre r\u00e9colt\u00e9es et transform\u00e9es m\u00e9caniquement plus facilement.<\/p>\n\n\n\n<p>En 1991, la San Marzano a \u00e9t\u00e9 officiellement supprim\u00e9e du <a href=\"https:\/\/it.wikipedia.org\/wiki\/Pomodoro_di_San_Marzano_dell%27agro_sarnese-nocerino\">catalogue des vari\u00e9t\u00e9s<\/a> et est tomb\u00e9e dans l&rsquo;oubli.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sauv\u00e9e de l&rsquo;extinction<\/h2>\n\n\n\n<p>La r\u00e9gion de Campanie a commandit\u00e9 des recherches entre 1995 et 1997 pour pr\u00e9server le patrimoine g\u00e9n\u00e9tique de la San Marzano.<\/p>\n\n\n\n<p>En effet, juste avant le tournant du mill\u00e9naire, de nouvelles plantes ont lentement commenc\u00e9 \u00e0 r\u00e9appara\u00eetre dans les champs de Campanie. Le consortium mentionn\u00e9 ci-dessus supervise l&rsquo;authenticit\u00e9 des tomates San Marzano qui arrivent sur le march\u00e9.<\/p>\n\n\n\n<p>L&rsquo;Appellation d&rsquo;Origine Prot\u00e9g\u00e9e (AOP) \u00abPomodoro San Marzano dell Agro Sarnese Nocerino DOP\u00bb (Tomate San Marzano de la r\u00e9gion Sarnese-Nocerino) est r\u00e9serv\u00e9e aux tomates qui respectent des crit\u00e8res stricts. Elles doivent par exemple pousser dans la r\u00e9gion de l&rsquo;Agro Nocerino Sarnese autour de San Marzano en <a href=\"https:\/\/www.gustini.de\/regionen\/kampanien.html\">Campanie<\/a>. La r\u00e9colte ne peut se faire que sur des fruits parfaitement m\u00fbrs et uniquement \u00e0 la main.<\/p>\n\n\n\n<p>En comparaison, les tomates que vous achetez au supermarch\u00e9 ne poussent m\u00eame plus dans la terre mais dans des solutions nutritives. Elles ont une peau \u00e9paisse et sont r\u00e9colt\u00e9es avant maturit\u00e9.
